Zesty Quinoa Salad

Reviewed: May 26, 2013
I just made this salad and it's delicious!! I think the versatility of this recipe is what makes it outstanding. I had lemons, so used those instead of limes. I also had a couple orange peppers and added those for a nice crunch. Definitely can adjust seasonings to personal preference but I do like the addition of cumin and red pepper flakes. Thanks for the recipe!

Slow Cooker Chicken Mole

Reviewed: Jun. 19, 2011
I had just purchased a turkey breast when I came across this recipe. My husband and I really enjoyed the complexity of flavors. I did substitute honey for the sugar, used Mexican chocolate instead of the cocoa and added 2 chipotles for extra spiciness. Thanks for a delicious and easy mole recipe.

Apple Crumb Pie

Fabulous recipe. I did cut back a bit on the sugar to 1/2 cup and felt the filling was sweet enough especially with the crumb topping.

Grandmother's Buttermilk Cornbread

Reviewed: Jan. 26, 2011
To make it a bit more Weight Watchers friendly, I decreased the butter to 1/4 cup and sugar to 1/4 cup as well. Still came out very moist and sweet enough for us. My family loved it and can't wait for me to make it again.

Spicy Peruvian Pork

Reviewed: Dec. 4, 2010
We recently spent 2 months in Peru and can't say that this dish reminds me of anything we ate while we were there, however my husband and I really enjoyed this pork. I used apple cider vinegar and added some of the orange juice to increase the marinade liquid and then let the meat marinade for 8 hrs. I also added cayenne as others suggested to make it spicy.

Triple Orange Sour

Reviewed: Dec. 4, 2010
What a great creation and you don't have to wait until summer to enjoy it. I had a bunch of lemons and limes, so I made my own sweet and sour mix. Heat 1 1/2 cup sugar and 1 1/2 cup water until sugar is dissolved. Once cooled, add 1 cup lemon juice and 1 cup lime juice.

Golden Lemon Cake

Reviewed: Nov. 2, 2010
The cake was moist but I actually was surprised how un-lemony this cake was. I used a lemon cake mix as suggested by others. I also added lemon zest along with the lemon gelatin and extract. Maybe be too many artificail flavorings from the cake mix and gelatin. The glaze, which I used only lemon juice, gave the most lemon flavor.

Peach Pie

Reviewed: Aug. 24, 2010
With peaches being in season, I wanted to make a fresh pie. This recipe is wonderful. I mixed the peaches with the flour, 1/2 c brown and 1/2 c white sugar and about 1/4 teasp salt and put it into the pie shell. I only used about 1 tablespoon of butter to dot the filling. It took longer, about 55 min to bake, but came out perfectly.

Salisbury Steak

Reviewed: Aug. 24, 2010
This was my first time making Salisbury Steak and my family really enjoyed this recipe. I decreased the ketchup by half and used a little Dijon mustard since I didn't have dry mustard. I also added some fresh mushrooms to the gravy. The patties were very moist and tasty.

Best Brownies

Reviewed: Feb. 24, 2010
Great fudgy brownies. The only change I made was after seeing Bobbby Flay's Brownie Throw Down, I used half brown sugar and half white and I was happy with the results. For any brownie recipe, it's important not to overcook them.

Russian Black Bread

Reviewed: Feb. 7, 2010
This is similiar to Lithuanian dark rye bread that I am familiar with. To get a more "sour" taste, I decreased the water and increased the vinegar to 1/4 cup. I also substituted molasses for the dk corn syrup. I used this recipe to make 4 bread bowls and served mushroom soup in them. It's a dish we always look forward to eating at a traditional restuarant when we visit Lithuania.
