Bubba's Jambalaya

This was fantastic! Added garlic with the onions,added a handful of frozen okra with the chicken, and added fresh crab with the shrimp. I let the sauce simmer for a few hours before adding the rice and seafood. Daaaaang! Nobody could have just one serving!

Tex-Mex Turkey Soup

Slow Cooker Chicken Taco Soup

Super yummy! I did make a few substitutions based on my pantry. Used chicken thighs, subbed chicken stock for beer, used regular pinto beans for the chili beans because I couldn't find gluten-free chili beans then added extra taco spice to make up for it, and let it cook more like 10 hours because that was when we all finally got home for the day. That soup was fantastic, and made delicious leftovers for lunch the next day. Thank you for such a yummy easy soup!!

Lori's Spicy Chipotle Lasagna

This lasagna is sooooo delicious! I used gluten free lasagna noodles, 4 peppers and a spoonful of the adobo sauce, used jarred tomatoes from the farmers market that had basil in it already, and completely forgot to add oregano. And it was still great!

Gluten-Free Peanut Butter Cookies

These were SO GOOD! I baked a batch for a Celiac's Group cookie exchange and they were a huge hit. I did swap half the white sugar for brown sugar. Otherwise, I stuck to the recipe. They were crispy on the edges and chewy inside- even ones that I froze to have later were amazing. MUCH better than your usual PB cookie.

Absolutely Ultimate Potato Soup

I made this soup tonight with only a little variation- I used haf and half instead of cream, and used gluten-free flour (2 TBLS was plenty). And I didn't have cilantro so I used fresh parsley. It turned out perfectly. We loved the rich velvet flavor. I'll be making this soup again and again.
