Apple Crisp with Oat Topping

BF said this is the best dessert I've ever made. It's deliciously simple and so tasty. I did add a tsp of vanilla to the crumble topping and about 1/4 cup of chopped pecans. Add some caramel drizzle and homemade vanilla ice cream - perfection.

Lemon Garlic Chicken

This was just okay for us. With the other 5 star ratings I was expecting more. We made the recipe exactly as written. If we try it again we will make it on the grill. It just seemed like it was missing something. The family said they would eat it again if I made it but they didn't care for it enough to put it into the menu rotation.

Salmon and Asparagus in a Bag

This recipe is simple enough to make on a work night and elegant enough to make for company or a special occasion. I don't have foil oven bags so we just wrapped them individually in foil. The salmon could use some additional seasoning and was a bit overcooked at 30 minutes. I did not steam my asparagus prior to putting it in the oven with the salmon and it was cooked perfectly. We loved how easy this was to clean up after dinner. All in all, this was healthy and tasty and we will make it again.

Roasted Radishes

I wasn't sure what to do with all of the radish that I had. I mean, I can only eat so many in a salad. So I was glad to find such a simple way to enjoy them. I used fresh oregano instead of thyme and really enjoyed the flavor. We also let them cook for almost 30 minutes and got a wonderful slight browning on the radish. This recipe takes some of the peppery bite out of the radish and they become a cute little morsel of tastiness.

Orange and Cinnamon Tequila Shot

Who doesn't like a shot of tequila for a quick buzz? I like the taste of the cinnamon before the tequila. I recommend using a good quality tequila. :)

Refreshing Lemon-Ginger Dressing

Such a refreshing light dressing. I served it over a simple salad with romaine, broccoli, onion, and bell pepper. This dressing would be wonderful over a salad with some chopped cooked chicken breast.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

BF and I really enjoyed this. I had some leftover pork chops that I needed to use up. They were already breaded so I just seasoned them with the cumin and warmed them in the dutch oven. While the pork was browning I cut up fresh green chilies and used these instead of the canned. After the pork was warmed up, I removed it from the pan and added a little more olive oil then tossed in the jalapenos, fresh green chilies, and onion all at once - sauteed until everything was tender, then added the chopped tomatillos, garlic, cilantro, marjoram and extra cumin. I also used broth instead of water and added an extra 1/2 cup because I wanted more of a soup texture. There are some wonderful flavors layered on top of each other in here and I will make this one again. I ate mine with a dollop of sour cream and some fresh cilantro for garnish.

Chicken Stir-Fry

This is a great, simple recipe that is perfect for busy nights. It is quick to throw together and very tasty. I omitted the carrots and used mushrooms instead and also used a yellow bell pepper instead of green since that's what we had on hand. The sauce to this recipe is fantastic and versatile enough to be used with any type of meat and veggies. We did use low sodium soy sauce, it would have been overly salty with standard.

Easy Oven-Fried Pork Chops

I used a panko bread crumb for the extra crisp it tends to give. I flavored the panko with onion powder, white pepper, garlic powder, red chili flakes and seasoned salt. I used 3/4 inch boneless pork chops and they were more than done after 30 minutes in the oven. The soy sauce added a slight hint of flavor underneath the bread crumbs that worked well with the chops. I served them with sauteed swiss chard and sliced potatoes baked in the oven. This recipe is a keeper.

Double Chocolate Sandwich Cookies

This are rich and tasty little treats. I didn't have the hazelnut extract so I used vanilla. I found the dough a little thick and sticky, but it makes a cute little cookie. They didn't last long in this household! These will satisfy your sweet crazing in just a couple of bites.

Chicken Fajitas from Mazola®

Another quick, easy recipe from Mazola. I marinated the chicken in the oil & seasonings for several hours. I also added extra cumin, and some chili pepper flakes for a little flavor and kick. I cooked the chicken first in the marinade, took it off the heat and then cooked the veggies in some of the marinade that I had set off to the side.

Double Fudge Brownie Cookies

This is such an easy, quick, and delicious cookie. I used 1/2 white chocolate and 1/2 semi-sweet chocolate chips. I'll keep a box of brownie mix on hand for when my sweet tooth wins over!

Cranberry Orange Tea Bread

This is definitely a five star recipe with a couple of changes. I added a tsp of cinnamon, a tsp of orange extract, used 1/2 cup butter and 3/4 cup applesauce. The texture is fabulous and the flavor is out of this world. Next time I make it, and I will make it again, I will use brown sugar instead of white sugar.

Onion Rice

This is a simple and light rice side dish that is easy and flavorful. I recommend using a smaller amount of pepper, it was a little too much for our tastes, so we'll cut back on it the next time we make it. Other than that we enjoyed it and will make it again.

Cranberry Pork Chops II

This is a fantastic recipe. I doubled the sauce, used chicken broth instead of water, and added a little bit of garlic. This has a wonderful sweet and tangy flavor that we really enjoyed. We served it with a lemon basil rice. Yum!
