Chocolate Chia Seed Pudding

Very versatile!! I made this using one 8oz carton chocolate soy milk and 1/4 cup chia seeds. I also made it with 8oz of sugar-free orange drink (store brand Tang) and 1/4 cup chia seeds. The orange version reminds me of Tapioca Fruit Juice Dessert my mom used to make us as kids. Next I am going to try with Apple juice and cinnamon. AWESOME

Apple Pie by Grandma Ople

I have made this several times now and it is delicious every time. No need to add cinnamon or spices to this pie, great without!

Zucchini Muffins

Delicious! I did add more cinnamon and a little bit of ginger. I also used 1/2 cup egg substitute and replaced the honey with agave. Trying to keep the recipe on the low glycemic side for my diabetic boyfriend. Will definately make this one again.

Asian Orange Chicken

Great flavor. Did not have fresh ginger, added a little ground. Used 1/2 brown sugar and 1/2 splenda (Diabetic in the house). Did not bread the chicken, saute'd chunks of chicken breast with a little salt, pepper and red pepper flakes. Served with some fried rice made with brown rice. Will definately make this again.

Baked Fish with Shrimp

Just made this, excellent!! Added 2T white wine, seasoning salt, garlic and dried onion to the sauce. Lightly cooked my shrimp in garlic butter first. (Had raw frozen jumbo shrimp, also cut them in half)Used fresh snapper. Placed on a bed of quinoa with some steamed green beans on the side. Will definately make this again and again!!
