Slow Cooker Adobo Chicken

This was my first time making / eating chicken adobo. I used a cheap bag of frozen chicken breasts. It was wonderful. So easy and so tasty! I actually enjoyed the pungent, tangy smell and flavor. In fact, I might go with a more intense vinegar than plain white next time.

No Bake Cheesecake II

Cheesecake is my favorite dessert! This one isn't my favorite. I prefer something more tangy and cheesy. But, it was delicious and took me only 5 minutes to prep! I cut the cool whip back to 1.5 C because it was already too much filling and I thought it would help retain the cheese flavor a little. I used powdered sugar instead of granulated because that's what I had on hand. Served with cherry pie filling on top. Turned out great! Thanks for giving me a way to enjoy cheesecake without having to worry about cracks, water baths or sinking!

Fluffy Pancakes

With only skim milk on hand, I was a little skeptical on how well mine would turn out. Then, I realized way too late that I was out of butter, so I had to go without that too. These still turned out magnificent. So fluffy and delicious! I think this recipe might have made eight 3" pancakes if I'd made them smaller (mine were 5 -6" and I got 5. Either way, what I ended up with wasn't enough for 4 people in my house.

Ethiopian Cabbage Dish

My husband thought this was amazing. I think it would have been for me with about twice the spice. Next time, I'll double the turmeric, cumin and pepper (and possibly throw in a little garlic?) Also, this is a lot to fit in a skillet. I used a big pot instead and that worked just fine. It's definitely a recipe worth trying. Yum.

Vanilla Bean Cheesecake

This cheesecake was amazing! My husband hates cheesecake and has asked that I make it again sometime. I made one with a store bought graham cracker crust and 1 with the Golden Oreo crust. The Golden Oreo crust is definitely worth the time and efort. Although I nixed the beans in the crust and added them to the cheesecake filling instead. Overall, I used 4 beans in the filling. and ditched the extract. I thought adding my cheap extract with my good beans seemed wrong. I would recommend this recipe to anyone. It was perfect.

Baked Salmon II

I found Salmon on sale and decided to try one of the "quick and easy" recipes out. Man was this a pleaser! It was so easy and flavorful! My husband and I both ate more than what we needed. Just couldn't help ourselves :)

Fried Pie Pastry

With all of the other great reviews, it's possible that I did something wrong, but I really feel like I followed the directions to a "t". I was skeptical when the "ball" started out as a crumbly and difficult mess. Once I got it together and into the fridge, I was hopeful. But 2 hours later, it was a pain to roll out without falling apart. When I finally got it into a tolerable shape and into the fryer, it only took a minute for it to crumble to pieces again.

Whipped Cream Cream Cheese Frosting

My sweetheart usually hates cream cheese frosting, but this was perfect. The whipped cream took just enough of the "bite" out of the cream cheese.

Brooke's Best Bombshell Brownies

I followed the suggestions of others and used half brown sugar/half regular sugar. Aside from that, I followed all instructions completely. While this recipe produced a very rich brownie, I just could not enjoy it. It was far too rich and too dense for me. The edges, which are usually my favorite part, were very "tough" in texture. So, I'm giving it a 4, because it was not a "bad" brownie, just not at all my taste.

Buffalo Chicken Dip

Really tasty and easy recipe. I whipped it together while giving friends directions to our house and had it ready by the time they got here. I usually stick to the recipe exactly first time around. This time I strayed just slightly. I put half of the ranch in before realizing it overpowered the other flavors. I cut it off at 3/4 C and added a little more Frank's Red Hot sauce. I'm glad I did. All the same, this is an excellent recipe.

Gingerbread Waffles

I made these as hangover food for a house full of guests over Halloween weekend. Everyone ate and enjoyed them, but no one seemed wowed. But, that might have been the hangovers. I loved them WITH the whipped cream and bananas. I think they were necessary additions. I'll definitely make these again closer to Christmas.

Cilantro Serrano Cream Sauce

This stuff was amazing with chicken enchiladas the other night. I had no intended use for the leftovers, but was determined not to toss them. Yesterday, I found myself devouring a bag of tortilla chips with them while I cooked. YUMMY!

Chicken Enchiladas II

I didn't have leftovers, I just really wanted to try this recipe for lunch today. It was awesome! It took me 5 - 10 minutes to cook the chicken breasts on the George Foreman grill while I prepped the sauce.

Sesame Ginger Chicken

I let this marinate for a couple of hours based on some other suggestions, and I doubled the "sauce". I still felt like they lacked flavor. The only flavor that really came through was the ginger, and I just wasn't a fan.
