Slow Cooker Adobo Chicken

This was my first time making / eating chicken adobo. I used a cheap bag of frozen chicken breasts. It was wonderful. So easy and so tasty! I actually enjoyed the pungent, tangy smell and flavor. In fact, I might go with a more intense vinegar than plain white next time.

No Bake Cheesecake II

Cheesecake is my favorite dessert! This one isn't my favorite. I prefer something more tangy and cheesy. But, it was delicious and took me only 5 minutes to prep! I cut the cool whip back to 1.5 C because it was already too much filling and I thought it would help retain the cheese flavor a little. I used powdered sugar instead of granulated because that's what I had on hand. Served with cherry pie filling on top. Turned out great! Thanks for giving me a way to enjoy cheesecake without having to worry about cracks, water baths or sinking!

Fluffy Pancakes

With only skim milk on hand, I was a little skeptical on how well mine would turn out. Then, I realized way too late that I was out of butter, so I had to go without that too. These still turned out magnificent. So fluffy and delicious! I think this recipe might have made eight 3" pancakes if I'd made them smaller (mine were 5 -6" and I got 5. Either way, what I ended up with wasn't enough for 4 people in my house.

Ethiopian Cabbage Dish

My husband thought this was amazing. I think it would have been for me with about twice the spice. Next time, I'll double the turmeric, cumin and pepper (and possibly throw in a little garlic?) Also, this is a lot to fit in a skillet. I used a big pot instead and that worked just fine. It's definitely a recipe worth trying. Yum.

Vanilla Bean Cheesecake

This cheesecake was amazing! My husband hates cheesecake and has asked that I make it again sometime. I made one with a store bought graham cracker crust and 1 with the Golden Oreo crust. The Golden Oreo crust is definitely worth the time and efort. Although I nixed the beans in the crust and added them to the cheesecake filling instead. Overall, I used 4 beans in the filling. and ditched the extract. I thought adding my cheap extract with my good beans seemed wrong. I would recommend this recipe to anyone. It was perfect.
