Pork Medallions with Dijon Sauce

Excellent recipe! I made a few minor changes: omitted the flour and seasoned my pork with lemon juice and pepper instead. I didn't have onions but I did saute sliced mushrooms and ended up doubling the liquid and mustard. I served this with egg noodles dressed with a little bit of butter to prevent sticking and some parsley. My husband loved this! Definitely a hit in our house!

Baked Ziti with Sausage

Excellent recipe. Changes I made (due to lack of ingredients): Only had 1 jar of pasta sauce so I reserved about 1 cup of the pasta water and mixed with the jar of pasta. Didn't have sausage so I used sliced mini-pepperoni from a bag and also cut up some homemmade soppresata. Turned out delicious! Served with baked Butterball turkey meatballs (which in-and-of-themselves are delicious) and asiago cheese bread. Excellent dinner and totally easy to make!

Chicken Cordon Bleu II

I finally made this evening after putting it off since Monday. It was much easier than I expected and the taste was simply wonderful! I only made 4 chicken breasts, used egg wash with added paprika and garlic powder then dredged them in flour which I also added garlic powder and paprika to. I then browned them on the stovetop before baking for 20 mins at 350 degrees. For the wine sauce, a I combined the wine, bullion and butter. Once that started to simmer, I added an extra slice of swiss cheese. I had read many reviews from folks who made the sauce along with the chicken and I really wanted that "melted cheese" flavor and this worked. One last note, I did cut back on fat content by using low fat ham slices, reduced fat swiss cheese, fat free half and half and part real butter/part "I can't believe it's not butter". My husband couldn't tell the difference and it tastes delicious. I will make it the same way again (likely soon!!)
