Spinach Chickpea Curry

This was my first attempt at a curry dish and it turned out great! Very easy and delicious... worked well for next-day leftovers too. I served this with jasmin rice.

Grandma Johnson's Scones

I was not as impressed with this recipe as I thought I would be, judging by all the great ratings. They were slightly fluffy and cake-like rather than the dense scone texture. This might be due to the fact that I used light sour cream and light butter. I also kept the amount of raisins but added an extra 1/2 cup of dried cranberries which was nice. I would make them again and try using full-fat for the dairy products and see if they come out better.

Double Layer Pumpkin Cheesecake

Excellent! I was a little concerned that the pumpkin flavor would be lost in the cheesecake since so little pumpkin (1/2 cup) is used in the recipe. However, it ended up being a great combination. I baked this in a gingersnap crust, which added some extra spice and was wonderful. We served it for Thanksgiving dessert topped with Cool Whip and it was a favorite!

Big Soft Ginger Cookies

These are amazingly good! I used softened butter instead of margarine and maple syrup instead of molasses, and they still turned out fantastic. I had to bake them for about 12 minutes instead of the recommended 8-10. Soft and melt-in-your-mouth... I will definitely make these again.
