No Bake Peanut Butter Pie

Made this for my son since he loves peanut butter pie. After reading other reviews, I cut down the milk to 1/3 cup. I didn't freeze it but refrigerated the pie. The pie turned out creamy, but still well-formed and delicious.

Pumpkin Crunch Cake

It is a decadent, over the top, dessert with little time or effort. It takes more time to assemble the ingredients than it does to make this truly scrumptious cake. It is simple in appearance but mouth-watering in taste. I was one of those people who had to go into work today after hosting a Thanksgiving dinner of 20 + people. My reward - a piece of this cake for breakfast. Nora, this is truly a keeper. Thank you so much!

Broccoli and Sausage Cavatelli

Yummy! I did add a little more garlic and cheese and think I'll add just a touch more the next time. I also used baby spinach in place of broccoli and think sauteing a bunch of sliced green onions would be great as well To me, the dish needed a little color. The addition of some finely diced Roma tomato added just at the end would be nice. My husband and son thought the dish was great just as is.

O'Brian's Potato Casserole

I had a Allrecipes Easter Brunch this year. I made the potato casserole along with many other recipes from Allrecipes. Apparently, frozen hash browns don't come in a 2 pound bag any more. It was reduced by several ounces. I reduced the butter to 3/4 cup total. Next time I will reduce the cheese by a bit and add more onion. Otherwise, it was super.

Caribbean Zucchini Bread

I made several mini-loaves of this bread to send home with guests after Easter Brunch. I felt the bread lacked flavor but everyone else seemed to like it. I did leave the coconut out since my daughter-in-law has a coconut allergy. I will certainly try it again. Possibly using a little more zucchini and spices to perk it up a little.

Brunch Strata

I made the strata for Easter Brunch. I had so many other dishes that I cut the recipe down to 12 servings and made it in a 9x13 baking dish. I was excellent, looked beautiful, and was enjoyed by all. It could easily be served for breakfast, lunch, or dinner. I know I'll be making it again soon!

Balsamic Roasted Pork Loin

As a balsamic vinegar fan, I thought this was yummy. There was a lot of the marinade left in the pan. Since the marinade was simmering while the loin was roasting, I felt it safe to make a gravy out of it. The gravy was very flavorful and the perfect with the loin.

Salsa Chicken

My husband is just learning to cook and very successfully made this chicken. Although he lacks cooking knowledge, it turns out delicious every time. I upped the ante and made the Mexican Cornbread II from this site as well. What a treat!

Mexican Cornbread II

Having been on a low carb diet the past two weeks, this was a piece of Heaven. I did reduce the milk to a scant 1/2 cup. Otherwise, I left everything the same. I served it with the Salsa Chicken from this site, Mexican Rice and Mexicali corn. Absolutely yummy on a cold winter night.

Grandma Ople's Apple Pie

As others have suggested, I added cinnamon to the pie. I wish I would have added a little more. If I could I would have given it 3 1/2 stars. Is is a good apple pie but not the best I have ever had.

Apple Crisp II

Absolutely yummy. In reality I would have to give the Crisp at 4.5. I used a melange of apples - Fugi, Gala, and Granny Smith. Each has a different texture and taste. I doubled the topping as others have mentioned and decreased the water to 2 tablespoons. I believe I might increase the cinnamon to 1 1/4 teaspoons the next time I make it.

Cut-Out Cookies in a Flower Pot

I have never liked making cut-out cookies. I felt the effort never equaled the return ... until now. I wanted to make onesie cut-out cookies for my daughter's baby shower. I thought I would try this recipe. If it didn't work I would order them from the bakery. They turned out beautifully! I made them about 1/2 inch thick to look more professional. I never had butter extract on hand so I just added more vanilla. Thank you. You've helped me perfect one of the skills to be a perfect grandma - cut-out cookies!

Taco Bake I

This certainly can be prepared quickly but I do not consider this an entree. It would make a good appetizer. Originally, I rated this four stars but reworking the recipe the second time I have to boost it up to five. The second time I made it I added an additional 1/2 package of taco seasoning and a can of mild chiles. I increased the refried beans to 2 cans and added additional cheese. Served with sour cream and black olives it was delish. So what if I don't consider it an entree as long as my family does, who cares.

Banana Sour Cream Bread

No one made a better Banana Bread than my "Gram" ... until now. I thought it would be a nice little gift to send home with my guests who were coming for Easter. I accidently dropped one of the breads as it was coming out of the oven. The loaf cracked so that was my opportunity. I just had to taste it. Delicious! The hint of cinnamon was great. The sour cream made it moist. And, dusting the pan with the sugar/cinnamon just adds to the crust. I will certainly be making this again. Thanks,Esther, for a wonderful recipe.

Chicken Marsala

I didn't especially care for this recipe. But, I did use just Marsala and no sherry. I used a sweet Marsala but maybe it would have been better with the dry. I will try it again though.

Pasta Lasagna

I unfortunately was sadly disappointed with this recipe. I always make my own pasta sauce so using jar sauce already put the recipe to a disadvantage. I added additional spices to the sauce along with a little garlic and onion but still I found the recipe quite bland. Possibly if I had simmered the sauce a little longer it might have been a little better. I can see that it might be a quick meal for a family with young chilren but for myself I prefer the "real deal."

Mini Meatloaves

I really rate this a 3.5. After reading other reviews, I added approximately 1/4 lb. of additional ground beef. I believe the oatmeal almost made the meatloaf too creamy. I will make it with 1/2 oatmeal and 1/2 bread or cracker crumbs the next time. I also think the addition of a little finely chopped onion would boost the flavor. The ketchup topping was good but slightly sweet. Maybe cut down the brown sugar just slightly. I wonder if adding the ketchup topping the second half of the baking time would allow the meatloaf to get a little "crustier." The little meatloaves were adorable. Children would love having a little loaf of their own.

Chicken Tetrazzini IV

What a great last meal before starting the New Year's diet. I made a triple recipe of the sauce. I browned the chicken in olive oil and 2-3 tablespoons of finely chopped onion and 1 teaspoon of minced garlic. I also sauteed fresh mushrooms in the same pan I browned the chicken in. I removed the mushrooms from the pan and then made the tetrazzini sauce. I made the recipe as given but did add a heaping teaspoon of Italian seasoning to the sauce(triple recipe). Instead of spaghetti, I used 16 oz. of mini penne pasta. I can see that if you used a 1 to 1 ratio of sauce and pasta it might be a little dry. The next time I make it I believe I will use whole or 2% milk, but it was ever so good!
