White Chocolate Macadamia Nut Cookies III

I did half butter, half butter shortening...just because that's what I like and my favorite chocolate chip cookie recipe calls for butter shortening instead of butter. They're amazing!

Pumpkin Muffins with Streusel Topping

I would probably bake there for a few minutes less than the recipe calls for, as they were a little too done on the bottom. Very good!

Waffles I

I doubled the vanilla because, well, why not? These were perfect. I also made a healthier version for my toddler using the same guide, but with substitutions. I ground up 1 cup of oats into an oat flour, and used 1 cup of whole wheat flour. And subbed the oil with applesauce. And doubled the vanilla, again. They were AMAZING! Everyone enjoyed that version too!

Slow Cooker Buffalo Chicken Sandwiches

Chicken Noodle Soup

So good. I think next time I will use broth instead. I make this and then freeze individual portions to thaw out for quick healthy lunches instead of buying expensive processed canned soups. Almost better straight out of the freezer.

Slow Cooker Taco Soup

Made this and it was sooooo good! Even better warmed over the next day. I did double the tomato sauce and half the water. Ate it with a little chedder cheese, plain greek yogart (in place of sour cream) and some thin salad tortilla strips on top. Delish! I think next time I may try it with some ground turkey to be a little healthier.

Simple Whole Wheat Bread

This is a really tasty bread. It's heavy, but not dense like a bread that didn't rise well. I wanted hearty loaves big enough for sandwhiches, so I baked into 2 loaves instead of three. I baked them for the same amount of time though and they turned out perfect. I also didn't have enough honey, so just made up the difference with sugar and that didn't seem to hurt anything. Will definitely make again.

Chinese Pepper Steak

I've been thinking about eating/making pepper steak for days but was waiting to pull the trigger because I wanted it to taste just like take out but couldn't find a recipe that I was ready to take a chance on. When I found this one I decided to give it a shot. So glad I did, it was AMAZING! The only thing I did different was double the sauce, tenderize the steak really well before I marinated it and added a lot of fresh ground black pepper. I let it marinate for about 3 hours. I like onions to be cooked really well, so unless you like them on the crisper side I suggest you cook them a little before adding the steak and the peppers in. Will be make this again for sure!

Brownie Frosting

I halfed this recipe and used white chocolate chips for a brownie frosting. And since it's fall I added some yellow and red food coloring for a nice fall orange. I just wish I had some pretty brown leaf sprinkles to put on top. I haven't eaten them yet, but I took a lick of the spoon with the icing and it was REALLY good. I'm taking them to a party this afternoon so I'll let you know how everyone likes them!

Creamy Chocolate Frosting

So delicious! Even my husband who isn't a big sweets fan was licking the bowl and the beaters when I was finished. I did end up adding quite a bit more confectioners sugar to get the consistancy I wanted.
