Overcoming my fear of cooking polenta!! It's so easy. Our family has it approximately 3 times a month now.

Slow Cooker Chicken and Dumplings
Talk about easy!!! I made it the first time by the recipe and added vegetables to it. Today I'm making it on the stove in order to freeze it for an upcoming event. I modified it severely. I diced a large onion and sauteed it in 4T of butter. Added a rotisserie chicken that I cut into bite sized pieces and a whole package of Tyson fully cooked, grilled chicken breasts. Also cut into bite sized pieces. Also added a 32ounce package of mixed vegetables and six cans of low-fat cream of chicken soup. My family likes vegetables and obviously I'm making a LARGE amount to feed a crew. I'll add the biscuit dough as needed when serving.
