Zucchini Cream Pie

So, why is there zucchini in this?? Tastes like a caramelly pecan pie to me- maybe you could use peaches or something instead. So yummy!! A great recipe to use up zucchini when you're sick of zucchini- you'll never know its there.

Coconut (Haupia) and Chocolate Pie

People need to make this!! It was so good, the layers are beautiful when cut, and it was surprisingly light! Next time I may use a little bit less chocolate because I love the cocunut so much! Bravo!

BBQ Chicken Salad

Yummy!! An easy way to have a healthy meal. This would be great stuffed into pitas! I made extra sauce to toss with it once I put it on top of green leaf lettuce.

Uncle Mac's Peanut Butter and Jelly Cookies

very yummy!! Make sure you have cold milk nearby, and a quick tip-Don't let their initial softness deceive you! If overcook too much they turn to very crunchy cookies. The last batch seemed mushy, but firmed to perfection!!

Banana Coconut Loaf

Very delicious! I added extra cherries and used pecans instead of walnuts. The extract makes it taste more like cake than bread- next time I may also try coconut flavor like the other reviewer.

Chocolate Crinkles II

Perfect!! I needed a recipe for a friend that can't have any milk protein- no butter,no milk...she loves me SO much now! These were soft and delicious....i will absolutely make them again.

Yummy Peanut Butter Cookies

I think I've eaten like nine of these since they came out of the oven. I didn't have margarine, and ran out of salted butter, so I used a stick of salted, and a stick of unsalted...they still were awesome. They won't look or feel done, but cool on the cookie sheet and they turn out great.

Mexican Wedding Cakes II

Unbelievably easy, and they just melt in your mouth. I made mine a bit smaller so they were more bite size, and used half pecans and half walnuts. I also piled them in a bowl with a linen instead of individual cupcake liners, it was another fun way to display them. yumyum.

Grilled Portobello and Mozzarella

Very tasty...I just grilled them on the stovetop first, and used fresh mozzarella. I put the whole thing on a roll for a sandwich, and it turned out great. I'll make these again.

Baked Teriyaki Chicken

Decided to write a second revies, my first was written in 2001 and said "Very good!! I used foil in the pan for quick clean-up, and I baked at 375 instead of what it said. The thighs came out moist, perfectly done, and delicious. I cut a bit of the soy, was afraid it might be too salty. Served over noodles." Still stands true...I forgot about my temp. change, used pieces of breasts and over did them at longer than 30 minutes! oops! The sauce is still perfect though (i add extra garlic).

Crispy Rhubarb Pie

Fabulous pie. I've never done rhubarb without berries before, so I was hesitant. It tasted great, and the topping is one I will use on other pies in the future. I used some extra corn flakes because I like lots of crispiness with my crumble topping. Tasty.

Chicken Florentine Casserole

Really good! We used cut chicken tenders to allow more of a casserole scoop than a huge piece of chicken. We also used jarred crushed garlic, and real pre-cooked bacon instead of the fake bits. Next time I'll add a little white wine to the sauce and use more mushrooms. Delicious!

Blueberry Pie

A very delicious pie! I followed a bunch of other reviews and used 5 TB. cornstarch, it wasn't runny at all, you just have to let it set for a good few hours before eating. I also added a bit of vanilla (just for the hey of it), and changed the baking times. I did 25 min. at 400, and about 45 min. at 350, covering the edges with foil the first half of baking. It wasn't too sour at all, in fact, my berries must have been sweet because I would have liked it a bit more sour!

Stephen's Chocolate Chip Cookies

A perfect cookie base! I only used one kind of chips, and tossed in some oatmeal instead of nuts. The base of this cookie is so great, you can add whatever fixins' you like and still have it work out. Delicious!

Mexican Rice III

Very good flavor. I used red and green peppers, a small can of green chiles instead of jalapenos, and a can of mexican stewed tomatoes instead of fresh. The colors were gorgeous, and I could have easily added more spice for extra kick. I'll make this again.

Cranberry-Pumpkin Cookies

These were delicious....very puffy and cakelike. I used more cranberries than called for- and they have to be fresh (frozen thawed)- it makes a difference. I'm also glad I did NOT use the pumpkin pie spice. Doesn't need it, the touch of cinnamon is plenty. Very nice seasonal cookie.

Mom's Buttermilk Cookies

I thought these would be boring and flavorless, but they are soft and delicious! We dyed the frosting pink and put a few sprinkles on top. If you have buttermilk sitting around, make yourself a sweet treat!

Alfredo Sauce

I've never made alfredo before, and this was surprisingly easy and delicious. I didn't really measure the cheese, so the amount may have been off. I added a bit of cracked pepper as well. Those worried about the salt (it was fine, but some mentioned this), just use unsalted butter and season to taste- that would be an easy fix.
