Pineapple Scones

Bake just until done, like a cake. They are then just like soft cookies, and I put frosting on mine! I couldn't taste any of the coconut- mostly orange, so maybe a little coconut extract next time. Very easy- i'll try some flavor variations next time.

Chocolate Lovers' Favorite Cake

very moist, and very yummy. you have to follow the instructions about cooling- this is one of those fudgy cakes that finishes cooking as it collapses after taking it out of the oven. I greased the pan generously with crisco- no flour- and it dumped out perfectly clean. Dump onto plate, not a rack, because it is moist enough still that it may drip through.

Yummy Peanut Butter Cookies

I think I've eaten like nine of these since they came out of the oven. I didn't have margarine, and ran out of salted butter, so I used a stick of salted, and a stick of unsalted...they still were awesome. They won't look or feel done, but cool on the cookie sheet and they turn out great.

Asparagus Lasagna

Used thawed frozen asparagus tips, didn't have thyme so used a lot of other spices (basil, oreg., rosemary). Added some italian flavor stewed tomatoes with a little juice, and even used the oven-ready dry lasagna noodles. We loved it!

Twice-Cooked Coconut Shrimp

The flavor was great, but I had a hard time getting coconut to stick to batter. It turned into a huge goopy mess. My deep frying skills need improvement.

Crispy Herb Baked Chicken

i used boneless breasts- pretty good alternative to plain chicken. had a hard time getting the mixture to stick really well, so i coated the top once in the pan- will definitely make again.

Hawaiian Millionaire Pie

Not bad for a frozen whipped topping pie. I doubled the cherries and used more pineapple. The ingredients can be changed to reflect any flavor, and next time i won't use a crust, just put it in dessert dishes.

Cranberry Streusel Pie

Very tart, but good anyway. I used pecans instead of walnuts and it tasted good anyway. Sweeten it up by serving with ice cream or whipped cream. I also chopped the berries.

Double Layer Pumpkin Pie

Unique...no bake pumpkin seemed a bit strange to me, but it was quite good. I accidentally used double the amount of cream cheese, so I topped the whole pie with extra cool whip and it still tastes good.

Strawberry Spinach Salad I

I used the fresh spinach, strawberries, and toasted my slivered almonds. To make it fast I used Briannas strawberry vinaigrette and added orange juice to it---absolutely delicious.

Zucchini Cream Pie

So, why is there zucchini in this?? Tastes like a caramelly pecan pie to me- maybe you could use peaches or something instead. So yummy!! A great recipe to use up zucchini when you're sick of zucchini- you'll never know its there.

Tomato-Mushroom Soup

Delicious and refined. The small amount of wine really adds to it, even if you boil out the alcohol. Would be excellent with a red meat dish.I will definitely make this again.

My husband loved it! Then i told him what it was and he refused to eat anymore....next time i won't tell. Very tricky- probably better with whipped cream. a nice alternative to zucchini bread.

Cream of Fresh Tomato Soup

Yummy- I used a whole bunch of cherry tomatoes from my garden...the only thing i might change is scooping out the tomato skins when it is all done. Great with a cheese sandwich.
