Chicken Florentine Casserole

Reviewed: Jan. 22, 2005
Really good! We used cut chicken tenders to allow more of a casserole scoop than a huge piece of chicken. We also used jarred crushed garlic, and real pre-cooked bacon instead of the fake bits. Next time I'll add a little white wine to the sauce and use more mushrooms. Delicious!

Perfect Flourless Orange Cake

Reviewed: Oct. 10, 2004
I also wondered if maybe there was an ingredient missing. And because you use the entire orange, the cake tasted a bit orange peelish/bitter. Very moist....good with whipped cream....but something not quite right.

Linda's Awesome Brownies

Reviewed: Jun. 13, 2004
I thought these were great. I was worried when people said they weren't that chocolatey, so i threw in about 1 c. mini choc. chips. They taste delicious, and the texture is perfect. Not too gooey/fudgy, and not too dry/cakey. A happy medium. I will put some frosting on next time for fun. yummy stuff.

Apple Brownies

Reviewed: Jun. 2, 2004
Very moist and delicious. Not quite a brownie though. These would be hard to eat with your hands unless the apples were chopped very small. More like a cake....these are screaming for a caramel/pinoche frosting. Will make again.

Red Potato Bites

Reviewed: Apr. 29, 2004
I just did the seasonings to taste, and didn't use chives(forgot 'em)..they still were a hit. A little time consuming to make- hollowing out the potato halves takes awhile, especially if you are trying to get maximum space for filling without butchering the potatoes through the skin (careful!). There wasn't a single one left. Great sports party food.

Best Baked Chicken

Reviewed: Mar. 16, 2004
After reading reviews I changed the celery salt to celery seed, and the garlic salt to garlic powder. Turned out great. I let the chicken sit awhile in the sour cream mixture, and used as much of it as possible. Sprinkle and coat as much extra stuffing as possible. My hubby loved it.

Zucchini Soup I

Reviewed: Aug. 4, 2003
Quite good! I halved everything, used fresh herbs without measuring, didn't even use the potato flakes or dill weed. I used a bit of 2% milk, and added a little extra pepper, salt, and garlic powder. Only blend half the soup to keep some yummy chunks, grated cheddar on the top and loaf of french bread. Even the kids ate it!

Crispy Rhubarb Pie

Reviewed: Jul. 31, 2003
Fabulous pie. I've never done rhubarb without berries before, so I was hesitant. It tasted great, and the topping is one I will use on other pies in the future. I used some extra corn flakes because I like lots of crispiness with my crumble topping. Tasty.

Rhubarb Stir Cake

Reviewed: Jul. 31, 2003
Mmmm...I served warm with vanilla bean ice-cream. I think it would work with fresh peaches or apples too. The batter is different than what I thought - i had to use beaters, just stirring didn't cut it. It turned out yummy though.

Chicken Tetrazzini for a Crowd

Reviewed: Jul. 28, 2003
A good guide for a casserole if you don't have the proper ingredients. I scaled everything way down- only one can of soup, about eight oz. pasta, about 4-6 chicken breasts. Didn't have mushrooms or pimentos so I added some celery, carrots, onions, green beans. My kids loved it, and so did my hubby.

Pineapple Pecan Cake

Reviewed: Jul. 28, 2003
Very moist- good with cream cheese frosting. I used a 20 oz. pineapple so I had to cook it a bit longer. I'll take out the nuts next time (too coffee-cake-ish), and maybe add a little almond extract. good cake.

Zucchini Brownies

Reviewed: Jul. 13, 2003
More of a cake than a brownie, but still a great way to use zucchini. I was unsure about no eggs, but some reviewers added them, some stuck to the recipe and didn't. I went in between and added one egg white. I'll make these again- zucchini?...what zucchini?

Pineapple Zucchini Bread

Reviewed: Jul. 10, 2003
Very moist, I almost wish there was more pineapple flavor. The glaze is a nice touch too even though it makes it a bit more messy. One good way to get rid of a zucchini.

Grilled Portobello and Mozzarella

Reviewed: Jul. 10, 2003
Very tasty...I just grilled them on the stovetop first, and used fresh mozzarella. I put the whole thing on a roll for a sandwich, and it turned out great. I'll make these again.

Empanadas

Reviewed: May 17, 2003
These little dessert cookies disappeared faster than the main course. I rolled them extremely thin, but next time I might make them a bit thicker. I used raspberry pie filling instead of jam (tastier), and rolled them in cinnamon and sugar right out of the oven (used a spoon so i didn't get burned). I'd like to try the dough with a savory filling next. Excellent.

Mexican Wedding Cakes II

Reviewed: May 17, 2003
Unbelievably easy, and they just melt in your mouth. I made mine a bit smaller so they were more bite size, and used half pecans and half walnuts. I also piled them in a bowl with a linen instead of individual cupcake liners, it was another fun way to display them. yumyum.

Sour Cream Apple Pie Deluxe

Reviewed: Apr. 22, 2003
This was a yummy pie! While making it I realized the container I had in the fridge was plain yogurt, not sour cream! I used the yogurt, and the pie still turned out delicious! I ended up baking it at least an extra half hour after the topping was on- because I was unsure about the yogurt, and the top wasn't browning. It didn't brown, just got crunchy, and the pie turned out great.

Beef and Parmesan Pasta

Reviewed: Apr. 10, 2003
A good family meal- easy when you are looking for something to do with your ground beef. I didn't have zucchini, so I skipped the veggie altogether and ate with salad. I used macaroni noodles, and needed a little more liquid for them to finish cooking, so just added a bit of water. Fresh parmesan makes it.

Cream Cheese Chicken

Reviewed: Mar. 17, 2003
Very unique and delicious. My husband, who is hard to wow, really enjoyed this dish. Don't expect the cream cheese to actually melt...it just softens mostly, so don't burn it. The brown sugar-dijon rub is awesome, i will use that for other things too. I used pecans. mmmmm

Lemon Chiffon Pudding

Reviewed: Mar. 17, 2003
Not quite what I had expected- it had a nice tart taste, but I think I put it in too shallow of a dish. It seemed to be done cooking early.
