About this Cook
I love to salt water fish and spend time at the coast. (I usually catch the most trout and redfish!) I love seafood, and cooked in a popular seafood restaurant for several years. Growing up in the south, I also love southern food and Sweet tea!! I am really into gardening and grow tons of tomatoes, even though I don't eat them. My friends and family will kill for a homegrown tomato. I own and manage a automotive repair and body shop, but still experimental cook 3 or 4 nights a week.
My favorite things to cook
I don't really have a favorite, but I really enjoy experimenting with southern deserts like bread pudding, peach cobbler, buttermilk pies, etc. I get an idea about a recipe and will look at for good recipes that have tons of 4 l/2 or 5 stars.
My cooking tragedies
I can't think of a particular cooking tragedies, I have had plenty over the years. But... I was so proud of my first glazed Easter ham, it was so beautiful. As our guest arrived, one of them had a new car so everyone when outside to admire it. Much to my dismay when I went back into the house the Easter ham was gone...our neighbors dog had come in the back door and ran away with it!

Mahogany Chicken Wings
These are really good. I don't even marinate them, I just put them in the oven on a tin foil covered baking sheet. When they start getting done I turn them and baste them several time with the sauce. I don't keep molasses or fresh ginger, so I use 1/2 cup brown sugar in place of the molasses and powdered ginger in place of fresh. Then I put a couple of drops of tobassco for a tiny little spice. The is one of my most requested recipes for game day!

Precious Pineapple Cake
Everyone loved this cake. I didn't even get a chance to put icing on it. I baked it in a 9 X 13 pan. It was very crumbly but my teenage kids and their friends didn't seem to care! They just ate it right out of the pan. They sometime request me to make it when they are at my house. I am not sure what to do to make it hold together better. I did use crushed pinneapple in heavy syrup, so maybe that was my problem. Heck, I think I might make the cake tonight and take it to work with me tomorrow!!

Skillet Pork Chops with Potatoes and Onion
Dang this is good! The only change I made was that I finished cooking in the oven, 350 degrees for 40 minutes.
