Summer Style Chicken

I thought this was a good, simple recipe (5 minutes prep time!) that took advantage of fresh summer ingredients. I seasoned the chicken breasts with salt, pepper, and garlic powder before layering on the vegetables; then I added additional salt and pepper to the top to bring out the flavor.

Strawberry Cake II

This cake was good, but I was a little disappointed. I found it a bit dry. If I were to make it again, I wouldn't add the 3 tablespoons of flour--I'd just leave it as is.

Good Old Fashioned Pancakes

These were awesome! I only had basic ingredients in my pantry and decided to give this one a whirl. Man, was I glad I did. They almost have a flavor reminiscent of French toast. YUM!

Cajun Chicken Pasta

This was GREAT! I worried when I first made the sauce that it was too thin and runny, but it worked out really well. I served it for a luncheon and it was a big hit. Thanks for sharing it!

Brownie Caramel Cheesecake

This was definitely not my favorite cheesecake. The brownie crust was too chewy and it was a mess to cut. It looked beautiful, though!

Cranberry Orange Loaf

This was a wonderful addition to our Christmas table. It was, in fact, the favorite food on the menu! The entire loaf was gone within minutes. The recipe makes a very moist bread, so it melts in your mouth--just take care when slicing it. We pretty much mutilated it (but it still, obviously, tasted great!). It makes a great gift, too. I gave several loaves away to neighbors.

Mmm-Mmm Better Brownies

These were no more difficult to make than a boxed mix, and the results were so much better! They're moist and chewy and VERY chocolatey--two thumbs up in my book!

Wow! Of all the things I made for Thanksgiving, this got the most raves. It had a really nice flavor and texture. I was worried when I served it--it looked dry. But the taste was phenomenal!

Brown Family's Favorite Pumpkin Pie

I really liked this pie. It's got a lighter, more moist texture than most pumpkin pies (thanks to the whipped egg whites). I used fat-free sweetened condensed milk and it turned out great and just a little healthier than your average pie!

Gourmet Sweet Potato Classic

Wow! I just served this for Thanksgiving and EVERYONE wanted the recipe! It's better than any sweet potato casserole or souffle I've ever made or had. It would even make a great dessert.

This bread was way too dry--we were all mightily disappointed! I also didn't particularly like the addition of the almonds; it might have been better with pecans or walnuts.

Baked Tortilla Chips

These were not so great--I'd prefer store-bought chips to them. The flavor was all right, but they didn't have the right crispness. Definitely serve them warm!

German Chocolate Cake III

I had some problems with the filling on this, so I thought I'd warn future bakers of this cake. I couldn't get it to thicken. Luckily, I had some instant vanilla pudding mix on hand (cornstarch would probably work, too, but I was out of it), and this solved the problem. It definitely was NOT a beautiful cake, but it sure did taste good! The secret is the whipped egg whites--they make it light, moist and fluffy.

Homesteader Cornbread

I have searched long and hard for the perfect cornbread recipe, and I've finally found it! Of course, it sparks the great Southern debate--Can you put sugar in cornbread? My answer is, ABSOLUTELY! This tastes like dessert! But if you're one of those southerners who is offended by the addition of sugar...find another one.
