Cinnamon-Peach Cottage Cheese Pancakes

They were good, but not rave worthy. I followed the recipe as written. The batter was thick and needed a little help when spooned onto the pan so it wouldn't be mounded and cook unevenly. No matter what I did, the pancakes got "leggy", so they aren't very visually appealing. They were moist and the peach bits added a nice pop of juicy flavor, but nobody in the family gushed about how wonderful they were. I think I'll just add a little cinnamon to my regular pancake recipe and serve them with fresh sliced peaches on top. That would be easier, prettier and taste just as good or better.

Easy Mediterranean Fish

Peach Muffins

Nothing special. I reduced the cinnamon, but still these muffins had no peach taste except for the chunks of peach themselves. These were kind of a waste of good fresh peaches. If I was to make these again (which I probably won't) I would try the tip to use applesauce to replace some of the oil, but instead of applesauce, i would use peach puree. Maybe then they would have more peach flavor. Not bad muffins, overall. Just not worth the bother.

Spicy Southwestern Slaw

Too much onion. The onion overpowers the other flavors. Even though I doubled the cilantro, I couldn't taste it in the end, or the bell pepper. I used a medium sized red onion and only used 3/4 of it because I had a feeling it would be too much.I should have used even less. I also cut the cayenne in half, but it was still very spicy. Any way I look at it, it didn't knock my socks off. I'm going to try it in fish tacos tonight, maybe I'll like it better that way than as a side dish for pulled pork. I will say that it is a beautiful looking dish. Very colorful.

Mediterranean Quinoa Salad

Very refreshing for a hot summer evening's meal. Even better the next day, after all the dressing had been absorbed by the quinoa. I made adjustments based on what I had in the fridge. Added cucumber and sun dried tomatoes, used green onion instead of red. I prepared it as a side dish for grilled salmon, so I left out the chicken. Next time I'll include the chicken or even tofu for a main course. Yummy!

Easy Mouthwatering Baked Ravioli

Just too darn salty! I as hopeful, since I had all the ingredients on hand and wanted to finish off what was left of a large bag of cheese ravioli. I even reduced the salt by 1/4 tsp. But obviously that wasn't reduced nearly enough. Otherwise, the recipe is just OK. The sauce is very thin. It smelled great while cooking, but was disappointing in the end.

Slow Cooker Pulled Pork

So easy, so good. I use whatever cheapo pork roast cut is on sale. I usually buy a few and keep one in my freezer for this quickie recipe. I've tried a few different BBQ sauces, but our favorite is from Trader Joe's. Yummy as pulled pork sliders with cole slaw on top of the pork.

Beet Bundt Cake

Just OK. I needed to do something with all the beets that we had from our garden, and the kids are reluctant to eat them. So, I slipped them into this cake and didn't tell them. They ate it, and said it was just OK. I'd say that it's not really worth the effort, unless you're desperate to get some beets into your diet any way you can.

Citrus Turkey Brine

Dark meat tasted spectacular. Breast seemed a bit odd on first taste, but as leftovers the breast was so moist and delicious. The only real complaint was that the skin didn't crisp up very nicely. Too moist maybe? We made this in the Weber barbecue as we always do. I wasn't sure at first if I would do this again, but after tasting the leftovers that were in the freezer for 1-1/2 months, I'm sold. Best Thanksgiving leftovers ever.

Beaker's Vegetable Barley Soup

Portobello Penne Pasta Casserole

I made this as the Vegetarian option for Christmas dinner. It was very good, and I'll make it again with a few changes. The minor problem I had was that I made the sauce too thick. Once I added the cheese, it was so thick it was difficult to mix in the pasta, mushrooms and spinach. Next time I won't thicken the sauce for quite so long. I also had to bake it for at least 10 minutes longer to get it bubbly and brown--probably due to the thickness of the mixture. ALTERATIONS I MADE: I used 1/4 c. butter instead of 1/2 c. margarine and used reduced sodium soy sauce. I also sauteed the mushrooms longer and added a little of the garlic to the olive oil. CHANGES I'LL MAKE NEXT TIME: I'll increase the amount of mushrooms and reduce the penne to compensate. I'll also reduce the amount of cheese or use of mixture of cheeses instead of just mozzarella, which is a little bland. And I definitely won't thicken the sauce for quite so long. I may also throw in some sun dried tomatoes to add a little dimension to the flavor.

Cream Cheese Frosting II

Everyone loved this frosting! I was a little worried that it wouldn't be sweet enough, but it was perfect, creamy and rich. I made 1/2 recipe, which was just right for a 13 x 9 pan of pumpkin bars. I will be using this recipe again.

These were good, but they didn't knock my socks off. Everyone liked them, yet they're not disappearing very quickly. I frosted them with the Cream Cheese Frosting II. I probably won't make them again, just because the response from family wasn't that enthusiastic.

Country Morning Cake

It went together quickly, but this batter was very thick and sticky. Nearly impossible to "spread" over a floured pan. Also wouldn't spread over the sugared middle layer--had to drop dollops onto middle layer and call it good. If I ever made it again, I'd add a little milk to thin the batter down a little. Really hard to tell when it was done too, because the sugar topping forms a crisp, crusty layer that pretty much cleans off the toothpick as you pull it out. I kept it in for an extra 5 minutes, and it was still gooey in the middle. Tasted OK, but I really don't get what all the raves are about. I've tried lots of better coffee cake recipes.

Almond Rhubarb Coffee Cake

This is my favorite coffee cake. The whole family loves it! It freezes well, so you can eat one and save one for another time. I've tried a lot of rhubarb recipes from this site, (it's the one thing that will grow in our garden) and this is the best!
