Pasta with Scallops, Zucchini, and Tomatoes

I liked it, but I deviated significantly from the original recipe. I opted to stray even before making it once as listed because the ratio of pasta-meat-veggies seemed way off. I increased the veggies by at least 2x (used 28oz can diced tomatoes, zucchini, and added a pint of mushrooms). Used 1lb scallop and .5lb shrimp with just a half pound of pasta, and the ratio still seemed off. The flavor was good though - just adjust ingredients for a better balance, depending on your preference.

Southwestern Quinoa Salad

If you use bottled lime juice, cut the amount down to about a third of what is called for (I cut it to a quarter cup and it is still quite sour). Also, use another reviewer's suggestion of cooking the quinoa in half stock/half water - mine got quite salty after cooking in the chicken broth.

Quick Chili I

Best chili I've had in a LONG time! I halved the recipe and it seems overly beefy for my taste - next time I will still cut it in half but keep both cans of beans. Subbed cayenne for hot sauce and tomato paste for tomato sauce (didn't have any). Cut the water back to 2T to avoid soupiness (putting it into bread bowls) - perfecto!

Asian Beef with Snow Peas

Easy enough, but I didn't think the flavor was very good. Just voicing it since everyone else seemed to like it... maybe it's me, but I was disappointed!

Easy and delicious. I usually split it into two pans - keep one at home and take one to work. Otherwise it is too rich to get through the whole pan :)

Key Lime Pie VII

Fantastic - couldn't be easier to make & tastes perfect. I used the recipe to make 6 mini pies in my jumbo muffin tin. I used graham cracker crumbs to do the crusts (followed the recipe on the box for 1 pie crust). I would have been better off making 8 mini's instead of six, though, as I had leftover filling and the crusts were quite thick. Also had to bake for almost 20 minutes, 5-8 definitely was not long enough.

Oatmeal Whoopie Pies

I was so excited about these, and they did not turn out well at all. The cookies looked like pancakes as they came out of the oven (they expanded and all mushed into each other, and they were totally flat) and they were rock hard. Not at all what I was expecting. I gave two stars instead of one because they did taste good. I didn't bother making the frosting since it wouldn't have worked out with hard cookies. :( Bummer.

Mouth-Watering Stuffed Mushrooms

After all the rave reviews, I decided to give the recipe a go. I'm a little disappointed. Used 25 medium sized mushrooms (used all stems in filling). I sautéed diced onion in with the garlic and mushroom stems and only added a dash of onion powder. The filling tastes heavy on the cream cheese, enough to where in some bites it's all you taste. I'll make this again but cut the cream cheese in half.
