Pasta with Scallops, Zucchini, and Tomatoes
I liked it, but I deviated significantly from the original recipe. I opted to stray even before making it once as listed because the ratio of pasta-meat-veggies seemed way off. I increased the veggies by at least 2x (used 28oz can diced tomatoes, zucchini, and added a pint of mushrooms). Used 1lb scallop and .5lb shrimp with just a half pound of pasta, and the ratio still seemed off. The flavor was good though - just adjust ingredients for a better balance, depending on your preference.

Southwestern Quinoa Salad
If you use bottled lime juice, cut the amount down to about a third of what is called for (I cut it to a quarter cup and it is still quite sour). Also, use another reviewer's suggestion of cooking the quinoa in half stock/half water - mine got quite salty after cooking in the chicken broth.

Quick Chili I
Best chili I've had in a LONG time! I halved the recipe and it seems overly beefy for my taste - next time I will still cut it in half but keep both cans of beans. Subbed cayenne for hot sauce and tomato paste for tomato sauce (didn't have any). Cut the water back to 2T to avoid soupiness (putting it into bread bowls) - perfecto!
