Corn and Zucchini Melody

really good, with limited cheese, lots of ground pepper and fresh veggies. My son, who is not a big veggie fan, ate a plate full before dinner. I did not have bacon on hand so I did not use it, but it would be a meal with it, and a tasty sidedish without. The real key to this is to use fresh corn off the cob.

Banana Sour Cream Bread

I made this at Thanksgiving and my son has made me make it 5 times since! Truly a keeper. I made it a large loaf pan instead and had to make sure it cooked through, but it is delicious.

Honey Baked Chicken II

one word: yum. Keep in mind, though, it is very rich: I think too much sauce for the amount of chicken. I think I will cut in half the amount of butter next time, as the chicken swims in sauce while baking. If anyone has any idea of how to get the pan clean afterward, let me know!

Southwestern Egg Casserole

Served this yesterday for Christmas breakfast and everyone raved. I substituted sharp cheddar cheese for the Monteray Jack, and added chopped scallions. I have just emailed the recipe to my guests, who all requested it.

Cranberry, Sausage and Apple Stuffing

this was a very flavorful option for stuffing made straight in the oven. My family has a wide variety of dietary preferences so I substituted spicy chicken sausage from Trader Joe's for the Italian pork sausage and got rave reviews. It smelled and looked fabulous and the smokiness and kick of the sausage contrasted beautifully with the sweet/tart of the apple and cranberry. I chose to make it with corn bread and will do this again next year.

Tasty Lentil Tacos

My son said this was the first vegetarian meal he came away satisfied with. That was because he ate at least 5 tacos - and so did his father. Make sure to fry up some corn tortillas fresh before eating. I used Monterey Jack cheese because that is what I had on hand and it was great.

Classic Greek Spinach

This is a delicious recipe, typical of Greek cuisine. For those who are concerned about their olive oil intake, please note that 'oil' dishes, are they are called in Greece, are served on days when no meat is served, traditionally on Wednesdays and Fridays: this dish would be the main dish, sometimes served with feta cheese for those who are not lenting. For those who are using it as a side dish, by all means cut back on the amount of oil to suit your tastes.

Cranberry Pork Chops II

I altered the recipe by using dried cranberries which I had on hand: they were sweetened already so I omitted the sugar and used orange juice in addition to the water. My son, who is the food critic in the house, loved them: tender, moist, sweet and tart.

Chris' Bay Area Burger

My family liked these better than I did, but we all agreed the olive oil kept the meat moist and flavorful. For me there was a bit too much basil and garlic in them: I would cut back next time and possibly add some cinamon or clove, common spices for ground beef in the Mediterranean.

Fettuccine with Sweet Pepper-Cayenne Sauce

a solid choice for a quick meal. I REALLY did not want to cook and had nothing in mind. I glanced at the quick and easy recipes and saw I had most of the ingredients, I substituted a water with veggie boullion for the chicken broth and it worked very well. My son, who was bitterly complaining about eating a meatless meal said: "When did you learn to make things taste good without meat!" Thanks for the recipe: it is a good one to have in my back pocket.

Balsamic Baked Tilapia

I would give this dish 4.5 stars if I could, it is definately tasty and repeatable, but fishy, so I would not serve this to anyone who was iffy about fish. My Husband liked it very much and had several helpings and wants me to make it again. I like I did not have red peppers in the house, so I substituted sundried tomatoes which worked well. The blue cheese is what makes the dish: the flavors blend well together. I would consider taking this idea and replacing the blue cheese with another strong flavor such as capers or dry cured black olives.

Lentils and Rice with Fried Onions (Mujadarrah)

a strong 4.5, but I think I will raise it to a 5 once I really know what I am doing. I added a bit of cumin to the taste and will next time add a bit of cinnamon. Greek yogurt (Fage) would be great, as would a tomato/cucumber salad. This is heavy, though, good for a cold day when craving something like macaroni and cheese - but a lot healthier!

Deb's Cranchick Salad

I suppose that it may not be fair to rate this so low, because I cut back on the mayonaise, as we don't like things so mayonaisey, but it just did not do much for our family. I liked the basic concept of cranberries, walnuts and chickens, but next time would replace the balsamic vinegar with mustard, and perhaps add some apples or grapes.
