Baked Applesauce

Wow!!! We had a bunch of mixed "mystery" apples from our apple picking outing going bad and decided to give homemade applesauce a try. I used at least a half a dozen, then tried to guesstimate the spice quantities. This is probably one of those "forgiving" recipes - just do what you think looks right! I used Truvia instead of sugar and added a little bit of cloves into the spice mixture. Delicious!

Mmmm. Loved this healthier version! Made as written except I substituted 1T of olive oil for the vegetable oil and crushed tomatoes instead of tomato sauce. It has a bit of kick. A little too much for kids, but just right for adults who like a some spice, but don't reach for the hot pepper sauce. Definitely a keeper!

Sweet Potato-Turkey Meatloaf

Split decision in our house. Husband said I should make this again, I'm on the fence, and the kids are 50/50. Everyone agreed it was better with some extra honey bbq sauce on the side. I made mostly as directed, the only change was putting 1/4 of the ketchup/bbq sauce on top per other reviewers suggestions. It didn't seem wet when I put it into the oven, but fell apart when we served it. Not a big deal for just the family! If I make this again I'll probably skip the ketchup and mustard and just use the honey bbq sauce.

Pumpkin Pancakes

Yum! My 6 and 2 year old girls gobbled these up. I made as directed except I swapped the all-purpose flour for whole wheat flour. If you top with a tiny sprinkling of cinnamon & sugar, syrup and if you are feeling really indulgent some whipped cream, you'll have quite the breakfast (or dinner) treat!
