Mexican Cream Cheese Rollups

I didn't read the full directions before I started mixing things together and accidentally added the 1/2 cup salsa to the cream cheese mixture rather than use it as a dip. I also love olives so I was generous with the measurement of both black and green olives. It was a bit soft with the salsa mixed in but the flavor was great. It got a thumbs-up from my co-workers. If you don't like olives, chances are you won't like this recipe much.

Rita's Eggs Strata

I made this for a brunch and it was a big hit. I've made several stratas before and this is one of my favorites (and I didn't change a thing). Everyone thought the flavor was great so I'm surprised by the people that gave it a low rating.

Key Lime Pie VII

I took it to a pot luck at work and it was a hit (for those that like key lime pie). I used fresh-squeezed key limes and I think it was worth the effort. It was very rich and creamy so I cut it into fairly thi n slices (I got 20 slices out of the 9-inch pie).

Overnight Coffee Cake

Candy Cane Cookies III

These are ok but I agree with some other reviews that they really aren't worth the time they take to make. I don't understand why some folks give it a 4 or 5 star rating but then also list about 10 adjustments they made to the recipe. IMO, they are no longer reviewing this recipe so it skews the overall rating. If you do make these, I would suggest not using the crushed candycane/sugar coating. They're much prettier left alone. These cookies are pretty on a cookie tray but I probably won't make them again.

Brown Butter Cookies

Fantastic cookie. Because of the browned butter, they have a very distinctive flavor. I saw a few reviews that said they "didn't brown the butter but they were still good". They may have still been good but they would have a completely different taste. Browning the butter is what makes these cookies special so I wouldn't recommend skipping that step.

Sour Cream Coffee Cake

Very moist and it had a good flavor. I've had other coffee cakes that have a bit more flavor, though, so I'm only giving it 4 stars. I would make this one again, even though it's not my all-time favorite.

Chantal's New York Cheesecake

I originally gave this 2 stars but the taste was good so I've updated it to 3. Original review: I'm giving it a 2 for the GIANT craters that developed while cooking. I took it out of the oven after 4 hours of "cooling" time, which was way too late. I can't imagine what it would have looked like if I'd left it another 1 to 2 hours, as the recipe had called for. I mixed it by hand and have a hard time believing that I over mixed, which other reviewers said could be the only reason for it to crack. Maybe it wouldn't have cracked if I'd used a water bath. Unless the taste turns out to be really good, I doubt I'll try this recipe again.

Crustless Spinach Quiche

Great flavor! I had a huge block of cheese I was trying to use up so I did add more cheese than the recipe called for but I think it would have been just as good with the amount in the original recipe. I served this at a brunch and several people asked for the recipe. It was very simple to make, which was also a plus.

Waffles I

They were light and airy, which was a nice change from some of the other recipes I have used. I froze the waffles I wasn't able to eat and they work well popping them in the toaster for a quick breakfast (not as good as right out of the waffle iron but still tasty).

I loved the flavor of these cookies! I think I cooked them a little longer than I should because they were pretty crispy but they still tasted great. This is my new "official" Christmas gingerbread cookie recipe.

Award Winning Soft Chocolate Chip Cookies

This is one of my favorite chocolate chip cookie recipes. I have taken them to work a few times and each time, I have gotten lots of compliments from the tasters. I've also had good luck with these staying soft, even a day or two after baking them (if they last that long).

Soft Chocolate Chip Cookies II

I do a lot of baking - this one was ok but it didn't have much flavor. I took them to work and not one person asked for the recipe or commented that they liked them (I normally get lots of feedback from my co-workers when they like something I've brought in). I agree with one of the other reviews that the Toll House recipe has more flavor. I doubt I'll make this recipe again.

Baked French Toast

This was excellent. Very simple to make and it was very tasty. I used a 9x13 pan but it REALLY bubbled over so I would suggest putting a water-filled pan on a lower rack to catch anything that may boil over as it bakes.

I really liked the flavor but it seemed to have a lot more chex pieces than nuts (the reason for 4 stars instead of 5) so I will definitely add more nuts the next time I make it. I think it would be great with other types of nuts and also with pretzels, as others have suggested.

Tres Leches (Milk Cake)

I took this to an early Cinco de Mayo potluck at work today and it was a hit. One of my co-workers, whose parents are from Mexico, told me that this was the best Tres Leches cake he's ever had. He said it was even better than his mom's, which was quite a compliment!

Fudge

This was an "ok" recipe if you want to make fudge but don't have the time or the ingredients that are in most other fudge recipes. It wasn't horrible but it wasn't my favorite, either.
