Libby's® Pumpkin Cranberry Bread

Yumm! I'm convinced you cannot mess up this recipe! I used only 1 1/2 cups white flour and subbed the rest with whole wheat flour, wheat germ and ground flax seed. I also only used 2 cups of sugar and it was plenty sweet. Subbed out 1/2 of the oil for applesauce and added walnuts and chocolate chips as well. It is delicious and even my picky toddler is devouring it!

Lentil Soup

As I'm eating this soup my opinion of it keeps improving. I used broth instead of water and just used a mixed italian seasoning. I used red lentils and found the soup to be too gritty for me to tolerate. Maybe this is because I've only eaten lentils a couple of times. I ended up pureeing the entire pot of soup with my immersion blender and it is now delicious! I highly recommend pureeing this soup, ours would have ended up in the trash if we had not done this.

Dee's Dark Chocolate Granola

Wow! This is exactly the chocolate granola recipe I've been looking for. I high recommend doubling the recipe as I made it as stated and it was gone in a day! Even my picky 2 year old loves it. I just can't say enough how wonderful this recipe is. The only change I made was using real butter instead of butter flavored spread. If you like granola and chocolate this is the recipe for you!

Cinnamon Toasties

These are delicious for breakfast! I dipped mine in strawberry syrup and they were so yummy! My husband had his without syrup as it does make them pretty sweet. Really quick and easy recipe, I definitely recommend this!

Sean's Falafel and Cucumber Sauce

Yummmm!! These were so delicious! Used basil instead of parsley since that was all I had. Also pulsed chickpeas in food processor and the texture turned our perfect! Only change I'll make is to bake next time!

Buttery Cooked Carrots

These would get 5 stars but the recipe is not stated correctly in my opinion. I've made them three times. The first time I made just as stated and they were really watery. So the next two times I drained off ALL of the water from the carrots after cooked and then added butter and sugar and they are the best carrots ever!!

Buffalo Chicken Dip

I was pleasantly surprised by this. I didn't think I'd like it but wanted to try it due to the really high ratings so I made it for my husband to take to a poker night. I tasted it before and I was surprised at how delicious it was! I added extra hot sauce because some said it had no spice. Well it was super spicy so next time I'm definitely adding less but will for sure make again!

Fudge Puddles

These are one of the best cookies I've ever made! They are adorable when finished too and you can top with any decoration you like! I topped each with a candy corn for a halloween bake sale and they turned out so cute! I left out the pecans also.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Wow these are amazing! Used chopped m&m's in the cookie dough instead of chocolate chips and left rest of recipe just as is and they really are the best cupcakes ever!

Seven Layer Tortilla Pie

I was really excited to try this since I'm always looking for good vegetarian recipes but was a little disappointed. It was still a little too rich for my taste even though I added corn and green chiles due to others reviews. It was still good so I am giving it four stars but I may try to cut back on the cheese next time. Oh and also used one can of refried beans instead of two cans pinto beans due to personal taste.

Creamy Chicken and Wild Rice Soup

I don't know how anyone could not give this 5 stars, it's perfect and you really can't mess it up. Didn't have quick cook rice mix so made regular rice mix as directed on package and then added to soup. Also cut butter amount in half and used milk instead of cream and it was really thick and delicious. I'm only going to use milk in the future as I think cream would make it way to thick.

Baked Soy Lemon Chops

This was a really easy recipe to make and it had a lot of flavor. Marinated for a couple of hours in a ziploc bag. Used fresh lemon juice and sliced pork loin instead of chops and it was really good. My husband really loved these!

Moonbeams

Anyone with a child who likes to cook has to make this recipe. My two year old had so much fun making these with me. He could even help roll in the coconut and there is no baking so he helped with the whole process. To top it off they are delicious and addicting and healthy!! What can I say, I just love everything about this recipe....except I prefer using crunchy peanut butter to give them more texture. thanks for the great recipe!

Lemon Zucchini Bread

My husband, two year old and I all loved this recipe. It's the best zucchini bread I've ever tasted. I didn't know how the lemon would taste in a zucchini bread but it is amazing! You must try this recipe! Also subbed 1/2 of the oil for applesauce and it turned out perfectly.

Black Beans and Rice

This recipe is one I will be making all of the time now! It is seriously the best and so healthy too. I made it with brown rice and used only 1 can of black bean. More beans than that would be too much for me. Used chicken broth because it's what I had. Also will leave out the cayenne next time as it just overpowers the other flavors.
