Shredded Beef Chimichangas

Process is great, however the flavor needs improvement. Found via Food Network some additions that made the flavor jump into the meat: Remove cooled meat to separate bowl, saute 1/2 onion, chopped & 2 cloves garlic, minced in remaining meat juices and 1 T oil. When soft, return meat to pan. Add 2 chopped tomatoes (I used 1/2 can rotel) & 1/2 chopped bell pepper (I also added 2 jalapenos). Let simmer til meat is moist, not juicy. Remove from stove and assemble. I also added salt/pepper (since this recipe doesn't call for ANY). The meat is AWESOME. When assembling, I did add some shredded cheese, so we'll see how that comes out of the oven.

Pineapple Orange Pancakes

Orange flavor is lost. used 1/2 c juice, and increased flour to maintain consistency. Could deal without pineapple chunks, so would recommend crushed if you must have pineapple flavor. Made a pineapple juice "syrup" as others suggested so as not to waste (though drinking is tasty too). This helped, but again, would rather not have a chunk//chopped fruit pancake. otherwise, it's a fluffy buttermilk pancake.

Homemade Noodles

super easy. decided not to run them through my kitchenaid pasta attachement to have a more homemade feel. just fine. no problem, and my kids ate them. Even used whole wheat flour, and consistency fine after adding about 1/4 c. water so dough would stick for rolling out.

No-Sugar-Added Blueberry and Banana Wheat Muffins

Remarkably good. I did add some (1/4 c) soy protein powder & fiber to bump it up for my weight loss program. Also didn't have any blueberries, but added the equiv. in cherries (20). Still a great combo and tasty.

Greek Chicken Salad

Pretty good. Sliced carrots & cucumber as called for, but think they would have been better julienned. Also, didn't have olives, but sliced some canned artichoke hearts into it, and used liberal amount of italian dressing. Would recommend the hearts added to the recipe. Served with "Peppy's Pita Bread" from site, and really enjoyed tonight's dinner.

Enchilada Casserole

Made very similar to reviewer "Bailie". Used ground beef with my own flair of seasoning, as I am not vegetarian. Added black beans and refried beans to that mixture with some green sauce (my preference for enchiladas). Tore tortillas into pieces for layering, and topped each tortilla layer with more sauce, to prevent dryness. Topped with cheese and olives, and serve w/ sour cream & salsa.

Cake Mix Cookies VI

Made with white cake mix, so coloring was lighter than typical. Put a few on the cookie sheet before adding the chocolate chips to try it plain/peanut butter. I liked it just as peanut butter regular. Would recommend baking at 10-12 min unless you like a center that tastes a lot like the batter rather than a baked cookie. Of course, this is a cake mix cookie, so expect it to be like a dollop of cake rather than a flat normal chocolate chip cookie.

Lasagna Roll Ups

Still not used to the texture of tofu, but I still enjoyed this recipe. my 4 yr old helped crumble the tofu, and I did all the cheeses. I didn't have enough mozzarella or parmesan, so I did supplement with cheddar. Still tasty, and I only boiled 12-15 noodles. some had started to tear, and only 12 fit in the 9x13. My kids enjoyed eating the leftover noodles so much, they didn't really eat more than one rollup.

Sausage and Rice Stuffed Summer Squash

Forgive me for my substitutions, but, my Rice Sides was not in my pantry anymore, so I made the rice from scratch (3c water/broth, 1 1/2c rice, 1c chopped celery, 1/2tsp pepper, 1/2tsp seasoning salt). My sausage was a tomato cheese sausage I removed from a casing, and sauteed with onions and the mushrooms called for. I didn't know what I was doing, bit I didn't drain the grease, I drained the extra water in the bottom of my squash baking dish, and barely left enough to cover the bottom when I added the butter (when baking the first 30min, had about 1/4" level). The rice made SO MUCH MORE than needed, so hopefully the pouch will be sufficient when you make this. I topped with mozzarella cheese, rather than adding into the rice mixture, and didn't add pecans (personal preference). I went back for more. So surprised at how delicious it is. And I was never a squash person growing up, and I went back for seconds.

Easy Chocolate Fudge Cake

This was alright. Satisfied a chocolate fix. Used a German Chocolate mix, so the sweetness of the fudge balanced it. Used lowfat milk with about a Tbsp of cornstarch in the sauce. Not terribly thick, but enough. Soaked into the cake perfectly. Agree that it should be served with ice cream or whipped cream...and a glass of milk.

Baked Ziti Primavera

Could you use any more dishes is this recipe?? Load a full dishwasher after dinner... That aside, maybe I'm not made for vegetarianism, because this was.only okay. Certainly not something I'll try again. It needed more cheese, and I did do this scaled down to 12 serving.

Butterhorn Rolls

Good, but not as good as my mom's in flavor. Baked for 15 minutes, and just barely starting to look golden. Most were still pale, but cooked. Started at 10am, had in fridge to rise by 10:30. Took out at 3:45 to roll out. Let rise from 4 to 5:45. Took to a function tonight and gone in no time flat. Split dough in thirds, so had 28 rolls. Tip I learned on a blog: to avoid waiting so long for milk to cool, heat 3/4c milk with shortening. Then, add 1/4c milk when removed from heat.

Great-Aunt Nina's Noodles and Chicken

used a differnt homemade noodle recipe, but the process being the same. Additions: since I didn't keep the seasoned skin in my soup, I did add extra salt/pepper to the broth when putting together the finished product. Also added a few shakes of tarragon to the chickn in the slow cooker. My chicken was in the cooker at 1pm on low, and by 5pm, I was able to take out my 6lb chicken, fully cooked, to finish the recipe. So even if you're low on time, or get started late, this can be ready by 6.

Flan de Coco (Coconut Flan)

I used 1/2c coconut créme coffee creamer, and therefore omitted the extra half cup sugar, milk and coconut. It provided enough coconut flavor, and there was ample sweetness from the condensed milk. I had to drink some milk to wash down all the sweet! The "caramel" was a failure. It didn't taste altogether burned, but it certainly didn't give my flan any flair. I baked in a 9" pie dish, but there was more milk mixture than space in my dish, so I put the remaining extras in a 9"square, and put that in a water bath since it didn't have caramel in the bottom. When I inverted the square, it didn't come out, Duh, so I cut it down the middle, and lay it in a plate with a spatula. The pie plate did invert easily. Between the two, they are okay, but because of the overcooked sugar, i did prefer the square.

Pot Stickers Traditional

My husband asked why we didn't make them more often! Made them twice this week. Used ground chicken.Put Raw mixture in an egg roll/spring roll wrapper. Used a pizza slice to cut the wrappers into fourths. 1T per quarter, sealed with water. The edges of the triangles were long, so I folded in the outside corners to make them more ravioli-sized, then pressed with fork. No worries on the oil/water mixture. I thought I doubled the recipe the first time and yielded 41 (with some inexperience, hadn't figured out the fourths at first.) The second time, did regular proportions and had 36. Only one package of wrappers used for both times.

Hot Fudge Sauce II

Oh so good! Used 2 12oz cans of milk, and turned out fantastic. Served for sundaes. Brought home leftovers, and my husband ate 1/2 cup by itself! Super easy, super delish.

Easy Chicken Rice Casserole

Just how I remembered my dad doing it. Cut up a fryer and worked just as well. Combined cream of chicken and cream of mushroom. Only stirred once at 45 min because my daughter wanted to stir the rice again. Otherwise, I would have left it from the original mixing. Aside from these differences, I loved it.

Orange Curried Chicken

This was good. Wanted curry, but found out I could use the rest of my marmalade in my fridge (bought for a different recipe years ago...). I know I used more than a 1/2 c water b/c I wanted to have enough sauce. Added a Tbsp of cornstarch in hopes it would thickening when cooling from the oven. not so much. Flavor was good. a great balance between Orange and curry. added about 1/2 tsp of garlic and a few dashes of soy sauce as recommended. Was good, but not out of this world. Would make if I was in a bind, but I don't have marmalade on hand as a staple.

Magic Peanut Butter Middles

These were pretty good. Made for "Peanut Butter lovers' Day" just because. In about 2 hrs start to finish, made while my kids napped. My peanut butter mixture was crumbly, so I added about 1 tsp water, which quickly changed it from dry to wet. After I started rolling PB balls, it firmed up (no refrigeration required). The chocolate dough was good consistency w/ no changes. followed advice to flatten and wrap around PB balls. I had no GLASS cup, so just rolled cookie in sugar and pressed with two fingers. Baked 7, cooled 2min, and all are round, couple cracked edges, but the PB is still hidden for a surprise.

Mama's Asian Chicken and Rice

Doubled sauce ingredients (except brown sugar and pepper flakes) per everyone's recommendations. Shimmered uncovered 10 min and covered 20. Sauce reduced to near nothing before I added cornstarch mixture. Stirred in mixture, then added about 1 additional cup water, and simmered another 2-5 min. Not thick like gravy, but accurately described as sauce at this point. Served with steamed asparagus. Didn't have 5-spice on hand, but pepper flakes give sufficient heat to make my nose run. Husband liked it, 2 and 4 year olds ate it, I had thirds (finished it off). Loved it!
