Caribbean Coconut Chicken

Doubled the coconut milk and the flavor was good, but I thought that it needed alot of salt or it was too bland. I added lime juice and fresh cilantro as well. It still seemed to need a little something. Will make again with some more variations and see if I can get it to 5 stars.

Cinnamon Streusel Orange Muffins

Very moist, but the orange flavor did not come through as strongly as I would have liked. I made them a second time and added a teaspoon of orange zest. I brought them to a breakfast meeting and they were gobbled up. I also made this as a 9" round coffee cake - came out great.

One Bowl Chocolate Cake III

Chicken Pot Pie IX

I borrowed the advice of other reviewers and cooked the chicken in broth, and reserved that broth for the pie. I added 1/2 tsp of poultry seasoning and a dash of seasoning salt - I used celery salt instead of celery seed. The results were fabulous. Excellent homemade potpie - I am delighted that I could make this taste so good without having to use processed commercial canned soups!

Oatmeal Chocolate Chip Cookies III

The first time I made this recipe I used dark and light chocolate chunks (Hershey's) and the cookies were fantastic. The second and third time I made them, I used regular chocolate chips and the cookies were good, but not great. Bottom line is, easy and good oatmeal base, but the quality of the chocolate matters. Will make these a regular for my kids.

Sweet Dinner Rolls

Excellent rolls, and easy to make. I had a hard time getting them all the same size/shape, but I am not a very good baker, so that was probably my fault. Since some of the rolls were smaller than the others, the smaller ones were darker than the larger, and not quite as good. I will add a little more salt next time too.

Butternut Squash Soup

This soup was delicious, but since I altered the recipe based on others' reviews, I only gave it 4 stars. Definitely half the cream cheese - it is very creamy with only using 1 package and would be way too rich with 2. I also roasted the squash first with olive oil, salt and pepper. It really brought out the flavors and made it easy to work with. I brought this soup to a large party, and was asked for the recipe by many people. There wasn't a bit of it left. Served it with warm rolls. Fantastic!

Soft Chocolate Cookies

EXCELLENT! I neglected to refrigerate the first batch, and they were too crispy. I put the second batch in the fridge for an hour, like the recipe said, and they were perfect - moist, chewy and delicious! Great recipe to whip up when the pantry is low!

Homestyle Turkey, the Michigander Way

Absolutely without any doubt the best turkey I have ever had - Won rave reviews at Thanksgiving, and made spectacular gravy because the seasonings were so great. The leftovers even made more flavorful soups as well. I will never bother with a brine again, now that I know you can make a moist and flavorful bird with this much ease!
