Depression Era Corn Chowder

This is my go to chowder when I'm having a tight week with the grocery budget. I usually add some shredded Monterey Jack cheese and thicken it up with instant potato flakes. My kids love it and I even made it for Christmas Eve dinner last year with cornbread on the side. So good!

Chocolate Eclair Dessert

This is the dessert I make every Christmas and one I turn to during the year when I need something easy and to die for delicious! I do what other reviewers do and melt the frosting in the microwave for a bit so you can just pour it over the top. I'm thinking of trying it with chocolate grahams, chocolate pudding and vanilla frosting...you just can't go wrong with this. Yes, it's a simple dessert but that's part of its appeal!

Sweet N Sour Beans

This recipe is PHENOMENAL! I made it for a family gathering and it was a hit. Even my daughter, who dislikes beans, loved it! I can't wait to make it again...you can swap out the types of beans for others as long as you keep the sauce ingredients the same...simply delicious!

Kettle Corn

I'm eating this right now...it's still warm! And it is oh-so-good! I've been in a homemade popcorn phase of late and wanted something different. This was the ticket! So easy and so good...just sprinkled a bit of sea salt on at the end for that true kettlecorn taste! Thanks for a great recipe!

Lemony Shrimp over Brown Rice

SO good! Made this tonight for dinner. I doubled it but didn't have enough shrimp so I added a package of imitation crab. No white wine either so used chicken broth and instant brown rice...but yummy! Everyone loved it!

Lasagna Alfredo

There were only two pieces of this left after my husband and four kids devoured it! True comfort food. I used no bake lasagna noodles and covered the dish tightly with foil sprayed with non-stick spray. I had to cook it longer to be sure the noodles were done but it was wonderful and easy. Also I had cottage cheese on hand so I used that...no difference in taste and a lot cheaper! Thanks for a yummy recipe!

Fried Cabbage II

I had a head of cabbage but no bacon so I used butter as other reviewers did. Fantastic! I will make this again and again and will try it with the bacon as well...it's low carb too! Thanks so much for this recipe!

Slow Cooker Turkey Breast

This has to be the easiest thing I have ever made in the crock pot! It almost feels like cheating to have something so delicious come out at the end of the day, get so many rave reviews, and know I did very little to deserve the praise! It's a flexible recipe and I will probably try some others suggestions of adding vegetables and such but try it exactly as the recipe reads the first time. You will not be disappointed! I actually have this in the crock pot right now, can't wait to come home to a delicious smelling house this evening!

Ratatouille

Amazing. I can't wait to make this again! My six kids gobbled it up, even my eldest daughter who does not like veggies in any form! The only thing I did differently was to use canned tomatoes, saved the juice and mixed a bt of cooking wine with it and added about a 1/2-3/4 cup on the layers. YUMMY! We watched the movie after eating it and the kids were delighted that they got to feast on the real thing!

French Toast Casserole

Fantastic! I have made this many times over the past year and it's been a hit every time. It's baking in the oven as I type this...and boy does it smell good! I usually save the bread ends that my kids won't eat and pop them in the freezer, when I have enough I use them to make this. The only thing I did differently (and not on purpose) was that I doubled the recipe but only used 2 TB sugar in the egg/milk mixture thereby ending up with more sugar for the topping. It makes it even tastier, in my opinion. Thanks so much, I'll be making this for years to come!

Mom's Coleslaw

I have been using this recipe for years after first finding it in a Quick Cooking magazine. Much easier to use two bags of prepackaged coleslaw mix to the dressing (or if you don't have a big family like I do, just halve the dressing and use one bag!). I always use Splenda when I make this and it's delish. I most recently prepared this when making the North Carolina pulled pork recipe from this site...piled it right on top of the pork sandwich...yummy! My husband never liked coleslaw until he tasted this and now he loves it!

Pat's Baked Beans

In a word: yummy! My bacon went bad (didn't know that could happen!) so I was forced to use breakfast sausage links. I can't wait to try it with the bacon because these beans were so delicious even with the links! The great thing is that you can adjust the beans to your liking, a very forgiving recipe. I made them for labor day and cooked them on low overnight in my crock pot. Served along side North Carolina-Style Pulled Pork and Mom's Coleslaw, both from this site...my sister told me that if she ever remarries she wants me to cater the wedding! Thanks so much for an awesome recipe!

North Carolina-Style Pulled Pork

I made this for Labor Day and what a hit! I used pork shoulder and, gathering bits and pieces from other reviewers, I put it in a roasting pan, rubbed the seasonings all over it and cooked it on 290 degrees overnight. The meat was falling off the bone by morning and the house smelled awesome! Wish I could try the smoking method but couldn't this year. I forgot to add the liquid smoke and didn't change the amounts on the liquid ingredients. My entire extended family loved it. We all agree that this is so much tastier than the sweet bbq pulled pork I usually make, in fact, that version seems sickly by comparison. I also made Mom's Coleslaw from this site and put it right on the pork sandwich as I read from other reviewers. AMAZING! If you haven't tried it like that, please do, it's beyond yummy! Thank you for this recipe, I will be a staple in my own collection now!

Steak N Gravy

My brother gave us some venison and I wasn't sure how to cook it. I stumbled across this recipe and decided to give it a try...boy am I glad I did! My daughter's boyfriend ate with us and he keeps asking when I'm going to make it again! Absolutely yummy, I can't wait until my brother gives us more venison!

Blueberry Sour Cream Coffee Cake

Juicy Roasted Chicken

This chicken was fabulous...does take longer to cook so you must have patience and time but boy is it worth it! My 9 year old stepdaughter loved it so much she ate 3 drumsticks and she's usually a light eater! Yum, yum, yum!

Pork Noodle Soup

Yum, yum, yum! I used leftover pork from another recipe I made from this site, substituted red bell pepper for the asparagus as suggested by another member and the result was a filling, tasty and tummy warming meal that my whole family loved. Will make this again!

Cindy's Pumpkin Pie

I am NOT a pumpkin pie fan. That said, this recipe was fantastic! I will never, ever make a traditional pumpkin pie again. This recipe produces a light, fluffy and delicious filling that melts in your mouth. I used French vanilla ice cream and canned pumpkin. My daughter, who is a die hard pumpkin pie fan, inhaled her slice and declared it the best she's ever had. Thanks for a great recipe!

Fluffy Biscuits

I just made these for breakfast and my kids and fiance' gobbled them up and declared them the best biscuits they've ever had. Next time I'll try using buttermilk for a variation. Also, instead of rolling them out I simply did what my mom did when she made biscuits: use vegetable oil spray to coat 12 muffin cups well and scoop the batter evenly between them all. I baked them for about 11 minutes and they slid right out of the cups, nice and fluffy. Thanks for an easy, quick and delicious recipe!

Pumpkin Coffee Cake

I made this last night for breakfast this morning with a few slight changes. I only had canned pumpkin pie mix on hand and since I didn't have any pumpkin pie spice, I added about 1/4 tsp each of cinnamon and nutmeg. My finicky step-daughter, age 5, initially turned her nose up at it when she saw it on the table but quickly gobbled a slice down, then another and finally pronounced it was just as yummy as her favorite chocolate chip pancakes! The rest of my family already want me to make it again and I'll probably add this to my Christmas morning menu. Easy but delicious!
