I didn't have an oven safe skillet, but I just transferred the frittata to a round pan, and it came out great! The cream cheese and eggs get so fluffy, and the cooked smoked salmon is delicious. It was like eating at a restaurant!

Peanut Noodles

My fiance loved this dish, but it's a little too peanut-y for me. I used 1 tbs ginger, but next time I'll use more scallions, 1 tbs sesame oil and 1/4 cup peanut butter.

Marinated Tuna Steak

This very delicious marinade works great even on pan-fried fish. Don't be afraid to let your tuna be pink in the middle.

California Jalapeno Trout

I didn't realize that this dish called for whole trout or a grill, so I spread the pepper/mango mixture over filets, wrapped them in aluminum foil and broiled them. It turned out well, though the cilantro got really mushy and tasted like canned spinach. Perhaps next time I'll wait until the fish is halfway cooked before putting the pepper/mango mixture on it.

Addictive Sweet Potato Burritos

I really liked contrasting sweet and savory of this dish, though I think I used too much sweet potato per burrito. I also changed the beans to be half black and half pinto, which worked well.
