Beer Butt Chicken

Sour Cream Cut-Out Cookies

I always make these at Christmas. My daughter loves to help! They turn out so thick and soft. They are even better a few days after they're baked. I add an extra egg and 1 tsp. baking powder for fluffy, soft cookies. I also sometimes chill the dough before rolling and cutting out.

Hearty Turkey Stew with Vegetables

I made this in my crockpot, left it on low all day and mmmm, the smell as I came in the door was amazing. I added chili powder, garlic and basil to mine. Served it with homemade muffins. Delicious dinner for a cold winter evening.

Butternut Squash Soup II

This was really good. I baked the squash first. Also didn't add celery cause i didn't want strings in my soup. I cooked the potatoes separately and didn't puree them for a chunky version. My 6 year old had 2 helpings!

Garlic Mashed Red Potatoes

mmmmhhmmm, so very delicious. You will think you're at a steakhouse when you taste these. I didn't peel the tators cause I like the rustic texture of the skins in them. Served them with broiled steak and yummmmmm they were great.

Amish Breakfast Casserole

I was a little apprehensive about using cottage cheese in this recipe. It turned out delicious though. I served this to guests as a light supper with a salad, and it was very tasty. I did add salt, pepper, and lawry's seasoning salt to the potato mixture. Good recipe, not sure if I would use it for breakfast though.

Marble Squares I

I have rediscovered this recipe, SOOO yummy. I used to make these when I was a kid, so this is a delicious memory of cooking for my brothers, now my family loves them, too. I use more chocolate chips- probably 1 3/4 cups- for a fudgy cookie. Also bake for 10 min. before attempting to marble them. I underbake them slightly for a soft, fudgy cookie.

Sweet, Sticky and Spicy Chicken

I dredged the chicken in flour to give the sauce more body. I thought it tasted too much of soy sauce, I was expecting more of a sweet taste, and I even added water to make more sauce to go over rice. If I made it again I would tweak it more to give it a better flavor.

Pork Chops Over Rice

This is a good method for pork chops to keep them moist and juicy. I did mine on the grill rather than fry in the skillet for a better flavor, and seasoned the chops with lawry's. Also did not add peas to the rice, had them on the side.

This is sooooo good, the tenderest roast chicken I've made. Definitely do the overnight seasoning, it is the key to moist and flavorful chicken.

Poppy Seed Chicken II

This was drier than I was expecting for a dish that is to be served over rice or potatoes, I even added 1/2 cup milk to the soup and sour cream mixture. The flavor was ok. If I made it again I would halve or omit the cracker crumbs.

This is a good recipe for a crowd! I didn't have pineapple on hand so I made them without and they were still moist and delicious. They will keep for several days or they freeze well, too.

I make this without the ham in it for a vegetarian version. Add a bay leaf to mine also. Serve it with cornbread, fried tators and coleslaw.
