Boudreaux's Zydeco Stomp Gumbo

Yummy! I increased the meat and decreased the chicken broth for a heartier gumbo. I have 2 kids, so I used only the tomatoes with green chiles and omitted the red ones, and it was plenty spicy still. I spent all afternoon cooking, but it was worth it!

Boneless Buffalo Wings

These were very good! I did need to use more flour than the recipe called for. Didn't have paprika on hand so I left that out. I used bottled wing sauce that I had in the fridge rather than the hot sauce and butter. Hubby says make again!

Pepper Steak

Made this tonight, it was very good, even my daughter who is not a big meat eater had seconds. I did not use the water chestnuts just because I didn't have any on hand. Used beef broth rather than water and buollion, and added a dash of rice wine vinegar. Will make this again.

Cowboy Caviar

I've made this twice in the last 2 weeks and can't stop eating it. I used fresh tomatoes and peppers from my garden. I omitted the black-eyed peas and used extra black beans instead. Adjust the jalapenos to your taste, I only used a tablespoon and it was plenty spicy for me. I served this as an appetizer/ dip with scoops corn chips. A winner!!

scrumptious! I used shell macaroni and fresh shrimp that I chopped. I omitted the green pepper and hot sauce for personal taste. Very good!

Honey Wheat Sandwich Rolls

I made these for thanksgiving dinner this year, everyone loved them. I omitted the egg, made the dough in my Kitchenaid stand mixer cause I don't have a bread machine. Shaped the rolls and baked them in a muffin tin. Very good recipe.

Downeast Maine Pumpkin Bread

As if this needed any more reviews, here's mine anyway. This bread is awesome, so easy to make. I did add raisins and walnuts to the batter. Couldn't stop eating it.

Pumpkin Butter I

This was very good, used homemade pumpkin puree. I did increase the spices a bit and didn't use any liquid since I made this in my crockpot, just let it cok all day long until it thickened up to the consistency I wanted.

Boiled Bagels

These were great! A good weekend project, they do take awhile. The recipe made 8 large bagels. I used bread flour for a better texture.I rolled half of them in poppy seeds before baking.

Pumpkin Cream Cheese Muffins

These were pretty good, a little drier than I was hoping for. I omitted the streusel topping, they were perfectly sweet enough without. I used canola rather than olive oil because I can't justify olive oil in baking. Used homemade pumkin puree from a pumkin from my garden. The cream cheese center is fabulous. This recipe makes a lot so I froze most of them and took them out for a quick weekday breakfast on the way to school.

Thin Mint Crackers

Well they are refreshingly minty and good but hubby says they are not as good as the thin mints. An easy snack for kids to make. I used the microwave to melt the chocolate. I used the townhouse crackers since that is what I had in my cupboard. Oh and I stored them in a tightly covered container in the fridge since for some reason the chocolate wanted to soften at room temp.

Speedy Ice Cream

Ok this review is for the method only, I used it to freeze a batch of icecream I had made up to freeze in my icecream maker which turned out to be a piece of junk and didn't work. Tried this way and had delicious soft serve in 20 minutes! I will use this method again! I did this with my pre-school class years ago and it was so fun for them.

Roast Leg of Lamb with Rosemary

This was my first time making lamb and it turned out very moist and tender with a delicious savory flavor. I followed the recipe, next time I will puree in the blender to chop up the rosemary more. Oh and after doing some research in cookbooks and on AR I baked at 325* for 2 hours and it was done medium rare to perfection! So these cooking times are to hot I believe.

Corn Dog Muffins

Well my family loves these! So easy and cute too. I halved the recipe for us, used only one box of muffin mix and it was just right for us, they ate them all and said 'you have to make these again' I used the lil smokies and stood them up- 3 into each muffin. They ate them with ketchup, just like a corndog.
