About this Cook
I have been in the restaurant industry for 22 years. I am a professional bartender. I have worked every level of food and cusine, and paired my mixology skills with food from truck stops to fine restaurants.
My favorite things to cook
am trying to learn more about grilling. i am also having to learn about cooking healthier. taking some of my old recipes and tweeking them to be a healthier alternative. it has become a hobby and a challenge to be able to lower the fat and calories out of food, while still making it hearty and tasty.
My favorite family cooking traditions
just getting together with the family is wonderful...each of us counting on the others specialties. i come from a long line of favorites come from the elders of my family, who, at one time, going through the depression era, could take a bone and make a meal from it. nothing went to waste. i also love visiting my rich heritage through food. one side of my famiy is norweign, the other spanish and native american. we try to teach the younger generation the value of heritage through food, and music.
My cooking triumphs
not over cooking chicken!!! i know sounds simple, but could never seem to master it.
My cooking tragedies
had a tendency to overcook seafood and chicken ....and still learning

Golden Sweet Cornbread
I didn't find this recipe as amazing as most. Fairly typical recipe, and although the flavor was fine, we didnt find it to be anything to brag about. we had a difficult time eating it as it crumbled easily. I will continue to seek out another recipe.

Decadent Chocolate Orange Cake
This cake was a huge hit! Follow the instructions for 8" cake pan. I only had 9" available, and now see the difference it will make, especially with cooking time. Also, I added a couple of drops of orange food coloring to get a little more color. The only thing I will definately do differently in the future is to double or even triple the amount of orange cream cheese filling. It was delicious, and wished there was a thicker layer. I also served it with a glass of "Sabra", a chocolate-orange liquor from Israel. I decorated with mandarine oranges, and gold candles as pictured. Was a very pretty dish. The "birthday" girl I baked it for loved it!!!

Creamy Mushroom Pasta
I loved that most of the ingredients were already staples in my cupboard. I found this recipe a bit salty. Next time i will use a low sodium chicken stock and salt to taste as i cook. i agree that this recipe also needed more mushrooms. All in all with a little tweeking, i made this a wonderful low-fat sauce with plenty of flavor. Next time i plan to add shallots.
