Pumpkin Chip Muffins

Per other reviews, I decreased the oil to 1 cup, and the muffins were perfect. I added a tsp of Nutmeg also. They turned out very moist with a great texture. I'll definitely be making these again.

Dark Chocolate Cake I

The texture and moisture were fine, but even with a thick layer of chocolate frosting, I didn't find the cake to have very good flavor. It wasn't nearly sweet enough or chocolate-y enough. I'd rather have a box-cake any day.

Chocolate Chocolate Chip Cookies I

Very good cookies, but I think they could be a little sweeter. I used 1/2 butter and 1/2 butter flavored shortening, and they are soft and moist.

Chocolate Chip Banana Muffins

Extremely flavorful and some of the best banana muffins I have ever had. Next time I will decrease the oil because they were a little too moist and soft for our taste. Great warm or cold.

Strawberry Oatmeal Breakfast Smoothie

I am not a smoothie fan in general, so I am giving this 3 stars instead of 2 as I would like to. Like others said, I processed the oatmeal first before adding the other ingredients, but I didn't like the oatmeal in it at all. I frequently found myself picking out small bits of oatmeal from my teeth. I also didn't add the banana because it was already way too thick with just the strawberries. After tasting it, I found it to need more sugar, so I added orange juice to thin it and sweeten it. My son liked it okay, but I doubt I will ever make this again without more major adjustments.

Peanut Butter Chip Chocolate Cookies

I wasn't crazy about these cookies. They were easy enough and they came out just as they should, I think, but I didn't think they were chocolate-y enough or sweet enough. I'd probably add chocolate chips in addition to the peanutbutter chips if I ever make them again.

Triple Cheese Spread

Great recipe, but I would recommend using sour cream instead of mayo. The mayo flavor was so strong that I decided to add three cloves of garlic and a green onion to cover it up. I liked it much better with the additions, so I will do that again next time.

Country Apple Dumplings

Awesome!! I halved the recipe and used 1/4 cup brown sugar and 1/2 cup white sugar. It tasted like a monkey ball cake but was so much easier and faster to prepare. Definitely a keeper and it will probably replace our annual Christmas monkey ball cake. I think I will probably add a second apple next time, which I will chop and sprinkle on top. I may also add pecans to it.

Peanut Butter-n-Jam Cheesecake

Easy recipe and good results. I did change some things though. I made this with an Oreo crust instead of a Graham cracker crust, ignored the glaze, and I added mashed banana to the mix.

Broiled Tilapia Parmesan

Great recipe! This was my first attempt at fish, and it was surprisingly good. I cooked it in a pan rather than broiled, and I changed the spices a bit, but not much. I served with couscous, which we felt made the fish taste even creamier. The sauce would be just as good on chicken. Definitely a keeper!

Strawberry Muffins

I liked these, but I was hoping for a strawberry muffin, and these don't taste like strawberry at all. I am not a big fan of nutmeg, so next time I will triple the jam or add chopped strawberries and leave out the nutmeg. The only change I made was using milk instead of buttermilk. The texture of these was very nice.

Crepes

Quick and easy and very tasty. I followed the recipe exactly except that I whisked everything together and put in the refrigerator for only 15 minutes as I cut up strawberries to fill the crepes. I was unsure as to what size pan to use. I am used to large crepes, so I used a large pan, but 1/4 cup batter didn't cover a quarter of the pan, so I ended up using 2/3 cup batter which still did not cover the pan. This recipe ended up serving 3 people, not 8, but the crepes were much thicker than I am used to, so if I had thinned the batter more, maybe we could have gotten 6 or more servings. I'll definitely make this again as is for a dinner crepe with chicken. For breakfast or dessert crepes, I would have to add considerably more liquid to thin the batter.

Chantal's New York Cheesecake

I followed this recipe exactly and followed all the cheesecake tips on this site- I used a water bath, I used room temp ingredients, I did not overbeat, and I set the timer to 60 minutes and then turned the oven off and left it sit in the oven for an additional six hours, but my cheesecake cracked horribly in the middle, just the same as past cheesecakes that I made without doing those things. The cake still tasted fine, but I doubt I will make another.

Scottish Shortbread III

I am not particularly found of shortbread, but I needed a Scottish recipe for a school project and this looked easy. It turned out perfectly, and I thought it tasted very good. I used 4 cups of flour instead of 5 and used 1/2 unsalted butter and half salted butter. I sprinkled the top with colored sugar before baking. The taste surprised me so much that I might make these again for Christmas.

One Bowl Buttercream Frosting

I was very disappointed with this recipe. I triple checked the recipe to make sure I didn't misread anything, and I definitely followed it exactly. Unfortunately, I didn't think the frosting was very sweet and it was nothing like any buttercream I have ever had. I eventually added another cup of confectioner's sugar and a tablespoon of peanutbutter to try to make it usable for my family.

Blonde Brownies I

Banana Muffins I

Apple Breakfast Bread

Very good, dense bread. I substituted half white and half brown sugar, and I also substituted nutmeg for the cloves since I don't like cloves. Great flavor and texture. I left the apples about 1/2" big so the bread has fabulous chunks of apple through it. I also added a few pecans for added texture.

Apple Pan Betty

Easy, fast, and really, really good. I doubled the recipe and used 2 cups apple and 2 cups bread since I only had tiny apples and I wasn't sure how much to use. It turned out great, but I will definitely add extra cinnamon and sugar next time to sweeten it up a bit and maybe add some nuts. Excellent with vanilla ice cream.
