Cajun Spiced Pork Chops

Veggie Fajitas

Very Good. I love fajitas, but this recipe did not have much of a southwestern flare which I think a fajita should be. Since I did not have a fajita seasoning pakect, I used about a 1/4 tsp of red cayenne pepper, and approx 1/8-1/4 tsp of garlic salt, onion powder, paprika, ground sea salt, and ground roasted ancho chili powder. I also added an additional 1/2 tsp of lemon pepper after cooking the final 2 mintues in the instructions. For those that don't like spicy food, adding the additional spices did not make the hotness overbearing, likely due to the sour cream. Other condiments I served the fajitas with included store bought salsa, chopped tomatoes, and shredded cheddar cheese. Had I had an avocado I would have made guacamole. Oh, and for the spicy food lovers, I had a bottle of hot sauce on the table as well.

Grilled Shrimp Scampi

Excellent scampi. I did not discard the marinade. Instead I cooked it in a pot till boiling, then reduced to simmer until the the shrimp was done on the grill. I layed the shrimp on a bed of whole wheat spaghetti, and drizzled with the heated marinade. Delicious. Thank you for sharing.

Gourmet Tuna Salad

Great flavor and texture. I like the crunchiness in the tuna salad from the almonds and celery. I made tuna melts with this recipe. They were excellent. Whole wheat English muffin slice, a slice of tomato, a heaping serving of the tuna on top of the tomato, then a slice of provolone cheese. Top lightly with dried oregano. Broil for 2-4 minutes, or until top of cheese is brown. Serve with a side salad and alfalfa sprouts.

Chicken Scampi I

Beefs Portuguese Style

An excellent tasting dish. Great flavors; I love cooking red meats in wine. I'm also a fan of garlic. Perhaps it was me, or the cuts of meat I used, but both times I've prepared this meal, the steaks have been a little tough. Other than that, I love it.

Beer Chops II

A good dish. Great flavor. I think this meal would be better as a stew. Add cornstarch to thicken the broth, cook with carrots and potatoes. Serve on noodles (I used whole wheat egg noodles) and bread.

Veggie Stir-Fry

Delicious recipe. And so versatile; use whatever veggies you have in the fridge. I replaced the zucchini with squash and used a leftover portobello mushroom. I added water chestnuts and bamboo shoots. I much prefer the taste of the soy sauce and cornstarch used in this recipe over using flour and beef broth, like other recipes require.. Thank you for sharing this with us.

Sweet and Tart Strawberry Salad

Superb. Balsamic vinegar really does go with everything. I thought the black pepper was going to be wierd, but it lent really well to the sweetness of the brown sugar and strawberries as well as the tartness contributed by the balsamic vinegar. You have to try it to take my word for it. I served it the first time with a dab of whipped cream. The second time I added blueberries to the recipe, and the third time I served the latter a la mode. I think this is a great topping for ice cream at a party, and can't wait to see how it is accepted by guests.

Oriental Vinaigrette

Very Good. This is not a vinaigrette, though, it's more like a honey mustard dressing with an Asian twist. Good nonetheless. I drizzled it on a salad consisting of romaine lettuce, baby spinach, radishes, toasted sliced almonds and mandarine orange slices. It accompanied a beef stir-fry dish and rice.

Broccoli Beef I

Excellent Dish. Very good flavor. A must-try. I added dried red chili pepper to add a little heat to the meal. I also used a little extra ginger, a 1/2 tsp total, and did not find it overpowering at all.

Honey Duck

Very Tasty. I love duck, and this was a very good way to prepare it. I was hoping for a crispier skin, however. I prepared this for a friend who had never eaten duck and was curious about the flavor. He enjoyed the taste, and agreed the mild gamey flavor is better complimented (or masked :) ) with a sweet glaze or sauce.

Easy Garlic and Rosemary Chicken

Excellent dish, and healthy. The second time I madfe this I rubbed a Tbsp of Extra Virgin Olive oil on the breasts; they turned out more moist. I served it with a Baked Sweet Potato and Broccoli.

Shrimp Garden Salad

Excellent. The shrimp was a great addition to the salad. Why didn't I think of that? Easy to prepare, and servable with every dish since you can use just about any dressing or vinaigrette. I also added nuts for a crunchy texture, and would like to try croutons another time. Very healthy (depending on the dressing), so you can have an extra helping and not feel guilty about it.

Amazing. I had no idea this dish would turn out the way it did. What a great idea, and so simple to prepare. You can make this dish ahead of time, just save the noodles, and add right before serving so they are extra crunchy. The rest of the ingredients you can mix together.

Zucchini Cakes

Tasty. Not what I expected, but good none-the-less. The measurement for old bay seasoning is a bit high. I didn't feel right putting a whole Tbsp in, so I only put 3/4 Tbsp in and even that was a little too potent. Cocktail sauce helped mute the saltiness. I served this with Nell' Cabbage Salad (also from this site) and the combination was good. I like the concept of using zucchini for the cakes, and will definitely try variations of this recipe. Thank you for sharing.

Portobello Mushroom Caps and Veggies

Very good. I'm a fan of portobello mushrooms. I still think they are best on the grill, however. Nonetheless, this dish was very good. I added a little green onion to the recipe. I served it with fried brown rice (with soy sauce).
