Made this for our evening meal, using the tilapia which held it's shape just fine. I made a mistake when I reached in the pantry and opened the coconut cream rather than coconut milk, so was sweeter than it should have been (also dumped in a can of chicken stock to try to mitigate the damage). Used a yellow and a red bell pepper, and I've never enjoyed their taste more. My husband was not interested in even trying a taste, yet ate a bowl full of it. With the extra liquid, the stew was soupier, but over rice, we loved it. Cilantro added to the flavor. Next time, I will add extra lime juice.
