Chicken Marsala Florentine

I followed the recipe except for using 1/4 cup butter vs. 3/4, cup, adding another handful of spinach and adding a clove a garlic. When it was cooking, I thought that we would not be able to eat it. However, after tasting it, both my husband and I really liked it. I served with a side of buttered spaghetti, and it worked beautifully.

Simple Beef Pot Roast

Was in the mood to cook this afternoon, so I tried this. I loved my mother's pot roast, but haven't found the right combination to enjoy having it very often until today. My husband said it was "really good", and I enjoyed it very much. I used fresh rosemary, but otherwise, pretty much as written. Thanks for sharing.

Taco Casserole

Made this last weekend for dinner for the grandsons - 4 and 5. Easy to prepare, simple ingredients, but no one liked it. I think it was the tomato soup. Should have substituted salsa or something.

Shrimp Primavera with Goat Cheese

This is one of those recipes that I would not change in any way. Add a glass of crisp pinot grigio, a green salad, and the it's a perfect dinner.

Simple Garlic Shrimp

So simple. Don't usually watch the videos, but am glad I watched this one. The only change I made was to use cilantro instead of parsley 1) it's what I had in the fridge, and 2) my tummy gets happy when I smell cilantro: I know something good should follow. This did not disappoint.

Penne with Chicken and Asparagus

Pleasantly surprised. Added mushrooms, but the rest was as originally written. The flavor is delicate but very nice. Will make again. May try a little white wine next time. Definitely will add to our dinner rotation.

Very good. I made it pretty much as written, except that I used chicken thighs. My husband and I both enjoyed the flavors. I squeezed a little lemon on mine after cooking.

Greek Chicken Stew (Stifado)

Hated for the meal to come to an end. Really good. Did as some suggested -- less olive oil, more wine, oregano to taste and had to use a can of tomatoes rather than tomato sauce because I assumed there was some in the cupboard. Served over rice. My husband really enjoyed it also.

Avocado Feta Salsa

I loved this even before it had a chance to chill and meld together. I had only cilantro, so substituted that for the parsley. Loved the feta. It added the perfect finish. Think next time I will add a splash of lemon. Didn't read through all of the reviews, but kept thinking that salad shrimp would be a fun variation.

Italian Sausage, Peppers, and Onions

This was better than I expected. I've made Italian sausage with grilled onions and peppers before, but the wine, garlic, oregano and basil really kicked it up a notch. I did use olive oil instead of butter, but otherwise stayed true to the recipe.

Moroccan-Style Stuffed Acorn Squash

Followed the recipe with one exception - dried cranberries instead of raisins. My husband loved it, as is even talking about it on FB. The red of the cranberries with the other veggies made for a visually appealing dish as well as one which is healthy and delicious.

Brazilian Fish Stew

Made this for our evening meal, using the tilapia which held it's shape just fine. I made a mistake when I reached in the pantry and opened the coconut cream rather than coconut milk, so was sweeter than it should have been (also dumped in a can of chicken stock to try to mitigate the damage). Used a yellow and a red bell pepper, and I've never enjoyed their taste more. My husband was not interested in even trying a taste, yet ate a bowl full of it. With the extra liquid, the stew was soupier, but over rice, we loved it. Cilantro added to the flavor. Next time, I will add extra lime juice.

Holiday Chicken Salad

Made this last night for a supper we had at our home tonight. Changed the servings to 30, and it turned out great. Followed the recipe closely, and only added a few seedless grapes. I knew last night when I tasted before putting in the fridge that it was good -- all of my guests agreed tonight. Only a small cup left.
