We loved this recipe, we didn't have swiss so we used Provolone cheese, it was sooo yummy. For the wine we used Pinot Grigio and it was fabulous! Even my 3 year old liked this one. We served this meal with white Jasmine rice that I cooked with 1 cup water and 1/2 cup of wine (pinot grigio) and 1 tsp of chicken boullion seasoning, and served with Green beans. This was fabulous! Don't pound the chicken too hard or too thin, it will fall apart. Also, big WARNING HERE -- DO NOT USE COLORED TOOTHPICKS OR THE CHICKEN WILL ABSORB THE COLOR FROM THE TOOTHPICKS. OUR CHICKEN TURNED GREEN FROM THE GREEN TOOTHPICKS.
Thanks for this recipe, it will be a regular weekly meal in our home from now on.
