This turned out very yummy, will definately make this again. The kids didn't like it though, but they are 4 and 7 years old.

Zucchini Brownies

Reviewed: Aug. 8, 2009
I do agree that this is more like cake then brownies for sure. These came out perfect, they were SO yummy!! We loved them and I actually shredded up 2 1/2 cups of zucchini and used the advice on here to mix the zucchini in with the sugar and butter and let it sit for 5 mins or so, then I added the other dry ingredients in and it was perfect. We loved this recipe and will definately make it again and again, it's such an easier way to get our kids to eat a veggie that they normally would never touch. Also, I used melted butter and NOT veggie oil, since I think butter is a bit better for you then veggie oil is. Next time I am going to try using coconut oil, I bet that would be awesome! Thanks for this awesome and quick and easy recipe!

Chicken Cordon Bleu II

Reviewed: Jul. 30, 2008
We loved this recipe, we didn't have swiss so we used Provolone cheese, it was sooo yummy. For the wine we used Pinot Grigio and it was fabulous! Even my 3 year old liked this one. We served this meal with white Jasmine rice that I cooked with 1 cup water and 1/2 cup of wine (pinot grigio) and 1 tsp of chicken boullion seasoning, and served with Green beans. This was fabulous! Don't pound the chicken too hard or too thin, it will fall apart. Also, big WARNING HERE -- DO NOT USE COLORED TOOTHPICKS OR THE CHICKEN WILL ABSORB THE COLOR FROM THE TOOTHPICKS. OUR CHICKEN TURNED GREEN FROM THE GREEN TOOTHPICKS. Thanks for this recipe, it will be a regular weekly meal in our home from now on.
