Hard Chocolate Glaze

I needed a frosting/glaze for my mini chocolate cupcakes. This recipe worked wonderfully. Was able to easily dip the cup cakes in sprinkles after dipping in the chocolate without making a mess and getting chocolate every where. This is a great recipe.

Chocolate Fudge Cookies

I am not a baker much more a cook. Nothing I ever bake turns out right. These cookies are fantastic!! I don't use all the oil usually 1/3 cup is fine. I have made these added a little mint extract to them before. I've also done similar ones with lemon cake mix and a peanut butter version. I work with mostly men and have made bags of them to bring to work. They are gone so fast I could barely get one to go with my coffee. Even my boss stole the rest of the bag to keep in his office. So around Christmas time I was able to get my hands on a bunch of bags of the mint and chocolate chips. Everybody LOVES them! I just put a cup of them in instead of a cup of the chocolate chips. Oh and I buy plenty of bags to last me well into the new year.

Grilled Lemon Chicken

I made this for passover so I made about 48 chicken breast. Everybody loved it! I don't have a grill and wasn't about to cook it in the oven it would have taken forever so I cooked them on my electric griddle the color was beautiful and the chicken was so juicy. I marinated them for about 4 hours. Also I added some Italian herbs to the marinade and reserved some of the liquid and brushed the chicken as I was cooking it. My neighbors came by while I was cooking saying they could smell it down the block and had to come by for a taste.

Burrito Pie

I changed a couple things around but followed the basic rules of the recipe which I'm sure would be great without my changes. I used 1lb of ground turkey in addition to the lb of ground beef, a verde taco sauce. I like to sauté my onions until they are almost translucent and then add the meat. Then I didn't add the cheese until the end and I put it on top. Next time I will add more green chili's I really like the flavor. Also spray the bottom of your pan place tortilla then put refried bean (98% fat free) then meat mixture and continued to top where I placed the cheese. I was able to save calories and it was still just as delicious.

Quick Tuna Salad

Easy stand by recipe. I added some rotini pasta to make mine a meal instead of a snack and it turned out great. I also took another reviewers suggestion and added a little dijon mustard it was a nice little touch. I also used fat free mayo and you could not tell the diffrence.

Chicken Rotini Soup

Simple recipe that is pretty flexible. I didn't have onion powder but I didn't think I needed it since there was already an onion in the soup. I used to slow cooker to cook my chicken and then used the stock in the pot and vegetables made this recipe even easier and the chicken even more tender.

Black Bean Brownies

A Simply Perfect Roast Turkey

This is a great simple recipe and just the foundation I was looking for this year. I always work a good amount of butter under the skin and over the skin. This year I mixed the butter with garlic and Italian herbs and since I was trying to simplify things this thanksgiving I used the herb mix you find in the squeeze tube in the vegetable section of the grocery store. Also brining is a must! I always brine and it makes the turkey juicy and delicious.

Cranberry Sauce

Super easy recipe! I add a little rosemary and orange zest to add a extra little flavor. I've been making the recipe for years. I also do a low sugar version for my grandmother using splenda instead of sugar. My grandmother loves it and cannot tell the diffrence.

Savory Tater Tot Casserole

My grandma makes a similar recipe and I was excited to make this for my niece. This recipe is great because you can really improvise as you go. I used a pound of ground beef and a pound of ground turkey. I browned the meat with a whole white onion then placed ingredients in a bowl and mixed with 3/4 a large can of cream of chicken which I thinned out with milk and the mixed vegetables. I added all the ingredients to the pan then place a layer of shredded cheddar cheese over the top then added the remainder of the soup which I then placed the frozen tater tots on the top. I use and electric oven and found that I needed to let it cook for the full hour and 15 minutes. My 5 year old niece loved the dish of course when I asked her she said she liked the top the best.

Banana Crumb Muffins

Recipe was super easy and tasty. Everyone at work liked them. Easy way to use bananas that are getting to ripe to eat. I would use about 1 - 1 1/4 cup bananas for more banana flavor.

Buttermilk Pancakes II

Did not change a thing about this recipe, it is perfect. My pancakes were light and fluffy. I added chocolate chips to some of mine and they were delicious!! Made them for mother’s day and my mom one of the most pickiest eaters ever born loved them and made me make extra so she could have some for later. If you are going to freeze them make sure the pancakes are nice and cooled off then wrap in plastic wrap. To re-warm them defrost, preheat oven to 350 and bake for 10 minutes or until they are heated all the way through. Make sure to place them in a single layer. I will be making this recipe again and again.

Perfect Sushi Rice

This recipe complimented my sushi very nicely. I took another reviewers suggestion and slowly added each ingredient (sugar and vinegar) tasting the rice along the way till I got it were I liked it. I winded up only using small amounts of both the vinegar and sugar. For some whose rice turns out to vinegary they might want to look at the quality of vinegar they are buying that may have a very big effect on how they're rice taste in the end. My only complaint is that I didn't make more because I had a good amount of yummy fish left over.

Pineapple Upside-Down Cake V

Great easy recipe! I made one for my neighbors and he inhaled his peice. I used almost a whole cup of pineapple juice and only wish that the pineapple tasted a little stronger. Other than that it was great.
