Chocolate Fudge Cupcakes with Peanut Butter Frosting

My daughter and I made these for her to take to summer camp. We added an extra egg, filled the cupcake papers 3/4 full, put the tbsp. of chocolate chips in the middle and pushed them down a little with a spoon and baked them for 24 mins. They were great; a perfect consistency!! I guess the extra egg helped! The melted chocolate chips made a nice little surprise in the center. The icing was really good too. We used cream cheese icing and added the peanut butter; also added a tsp. of milk to soften the icing a little as per Cookie Queen's suggestion. Thank you for a great recipe!

Old-Fashioned Peach Cream Pie

I doubled the recipe to make two pies and baked both at the same time. I followed the directions step-by-step, but I was a little short on sour cream, so I probably only put about a cup-and-a-half of sour cream in them. I also used about 12 fresh peaches (6 peaches per pie). While baking the first 42 mins., I covered the edges of the pie crust. I followed Trinity's Mom's suggestion and added some oats to the topping. The pies were out of the oven for 15-20 mins. while I prepared the topping and upped the temp. to 400 degrees again, and when I put them back in the oven I uncovered the edges for the last 10 mins., then turned the oven off and let them sit in the oven for another 10 mins. They were perfect; not runny at all. I cooled them for about 40 mins. and then covered them and put them in the fridge to chill, and they were delicious!! Thanks for a great recipe!!

Pizzelles II

I made these for Christmas, and they were the best Pizzelles I've ever tasted. They were light and crispy. Best of all, they didn't stick to the Pizzelle iron at all. I followed the recipe exactly, and they were perfect. Thank you for a wonderful recipe!

Best Ever Rugelach

I was afraid these were going to be too sweet, but they were perfect!! I make the recipe exactly as written but without the orange marmalade. These are more like a pastry than a cookie. My daughter who normally doesn't like nuts or raisins loved them!! She suggested I try making them using chocolate chips...This might work with chocolate chips, coconut and walnuts...hummm??? Lemon Sponge Pie I

This is a recipe my dad gave me this week that my great grandmother used to make. The only difference is her recipe only called for two eggs & egg yokes and 1 cup of sugar, so if you don't have enough eggs, don't fret, it works with just two!! I made it with only two eggs and used an extra deep pie shell which I really didn't need to do. Next time I'll try it with four eggs. It really is a delicious pie and very very easy to make. I couldn't believe it used so few ingredients and turned out so nice. It looks very liquidy when you pour it into the shell, but it sets nicely as it cooks. I can see where it gets the name "Lemon Sponge Pie" as it is deliciously lemony tasting, custardy on the bottom and very spongey on top. We really enjoyed it.

Dark Chocolate Cake II

This cake is so easy to make and delicious!!! I used cake flour, dark unsweetened cocoa and buttermilk (no vinegar) as suggested by another reviewer. The entire cake was gone quickly. Next time I'll make two!! Thanks for a great recipe, Kellygurll!! I used 'Rich Chocolate Frosting' by Amy Via from the Allrecipes website. Excellent together!!!

End of Summer Vegetable Casserole

I made this for our Memorial Day picnic and , although my parents loved it, it wasn't a great hit with my grown children, mostly because of the noticable egg in it. I took the advice of the other cooks and didn't sauté the veggies, and they were just right. I think it is definitely a recipe that can be adjusted easily to be a pleaser...maybe a layer of cream of broccoli soup, rather than the egg/flour mixture? I think it would be even better if not for the noticable egg.

Luscious Slush Punch

This punch is delicious!! Very pretty too. It was a big hit at my daughter's baby shower today. We had about 50 people and I had tripled the recipe, so I brought six 1 gallon baggies of punch with me, and we used four, so doubling it for a party of 50 was perfect. I took the advice of others and cut the sugar in half, and it was perfect. The strawberries in the punch were really good too. Yum!! This is my favorite punch recipe ever. I would give it 10 stars if I could. Thank you so much!!

Baked Pineapple Casserole

I double the recipe and only use 1/2 cup sugar for a 12 serving-sized casserole, because the pineapple juice sweetens it also. I also add two slices of bread. Make sure to cut your bread in small cubes. It's delicious cold too, like a dessert! Thank you Cheryl!!

German Chocolate Cake III

Loved this cake; however, it did stick to the pans!! The icing was sticky enough that I could icing the layers back together and no one knew the difference! No need to change the recipe or add anything, but the icing does need to cool first, and give it at least an hour in the fridge. Do make an extra half recipe of icing and toast the coconut and pecans! I do think that next time I will take the advice of others and put the can pans in the freezer for an hour before attempting to remove them from the pans since "it doesn't dry out the cake, and the layers will pop right out if you use a hot wet cloth on the bottom of the pans", so why not? Delicious cake!! Thank you, Dean!!

Spinach and Strawberry Salad

I dissolved the sugar by boiling 1/6 cup of water on the stovetop and adding 1/3 cup of sugar to make a syrup (8 servings-sized salad), and cooled it in the fridge before adding to the salad dressing. This worked out fine. I also used extra virgin olive oil in place of vegetable oil and added a large can of manderine oranges (drained), and two sliced kiwis and lots of strawberries. It was a delicious salad and a big hit with our family. I'll be making this for guests!!

Awesome Grilled Cheese Sandwiches

Great way to make lots of grilled-cheese sandwiches at the same time. They go great with a pot of chicken corn soup. I lost track of how many my son-in-law ate. We loved them with the cheddar cheese, as I always used Amercian cheese in the past.

Sam's Famous Carrot Cake

I made this for my daughter's birthday, and it was very good. I used two round pans and sliced both layers after the cake was baked so I would have a 4-layer cake and iced it with cream cheese icing. The only thing I will do different next time is to bake it 10-15 minutes less. I checked my oven and the temperature was correct.

Hawaiian Fruit Crumble

I thought it was okay, but my three daughters didn't care for the combination of apples/pineapple/cranberry together. They thought it tasted too sweet, even though no sugar was added to the fruits. I used Granny Smith apples.

David's Yellow Cake

I was a little leary about trying this cake, but it turned out great!! It was also DE-licious, thanks to all the great tips from others. I substituted 2 tbsps. of cornstarch for 2 tbsps. of flour for each cup of flour, sifted my dry ingredients twice, used cake flour, 2 tsps. of pure vanilla extract, made sure to cream the butter and sugar well and then creamed it well again with each egg yolk added, lined my cake pans with parchment paper, and tapped the pans on the counter to rid any air bubbles prior to cooking. It was the perfect yellow cake recipe. Thanks David!!
