About this Cook
My culinary degree comes from Switzerland, my interest in cooking from my mother. I also have a Master's degree in Hospitality Mgt., and spent years in kitchens across the U.S. and Europe. I now work for a software company installing touch-screen terminals in restaurants and training managers and users how to use them. Same hours, less heat!
My favorite things to cook
I love hearty, stick-to-your ribs, eclectic recipes from Central Europe with a southern European flair and Mediterranean influences. I believ that food brings people together in ways little else can. If we all sat down to eat together, there would be no more wars.
My favorite family cooking traditions
My mother is of Irish extraction, my father was German. I think that shows through in my recipes but I also surprise myself and others in coming up with unusual combinations every time I step into the kitchen. Most of all, I believe no meal should be boring.
My cooking triumphs
There have been quite a few. My favorite was submitting a few recipes in regional cooking contests that did quite well.
My cooking tragedies
In cooking school, I accidentally dropped an entire one-pound box of salt into a pot of consomme we were making. It tasted like sea-water, we had to eat what we cooked and my class-mates would not let me near the salt for a week!

Roasted and Curried Butternut Squash Soup
This is a grown up treat. I hate squash, but I cater parties and was asked by the client to make a squash soup. I searched and found this recipe, followed the instructions exactly and wound up with a soup I tried and actually liked(!!!) and received rave reviews from my paying clients over. Have used it several times since and am working on coming up with some short cuts which may allow it to obtain better ratings on the quickness & easiness ratings. As for the kid-friendly rating, who cares? Not everything is for children, who are notoriously fussy eaters and should not be catered to as they have no sense of taste and should be ignored in terms of culinary aspiration. AllRecipe should add another rating scale - entertainment potential, in which this recipe would score off the charts.

Spanakopita II
This is authentic Spanakopita, as you would find in any Greek household or restaurant in Athens. The other two recipes o this site are very poor imitations and adulterated. True spanakopita has NO cinnamon in it and certainly has no Swiss or other cheeses in it. Feta and Parmesan, used as a subsitute here for the Greek equivalent, are always used, and dill is also a must for authentic flavor. Bravo, Mary Kessler, and thanks for not making this "Mary's version" - true classics don't require silly additions or "improvements."
