Corn Casserole II

I made this for Thanksgiving dinner at the in-laws. I followed the ingredient list exactly, and it turned out excellent. Everyone loved it as well. Thanks for sharing!

Spicy and Creamy Vegetable Soup

This was really, really good. The only changes I made were instead of the Rotel, I used fresh tomatoes and green peppers, and Frank's Hot Sauce. I also used half and half instead of heavy cream. Absolutely delicious, will definitely make again.

Kid-Friendly Taco-Burritos

Very good and very easy. Both kids loved it, even the "bean hater"! We also loved the fact that they were pretty mess-free. Will definitely make again. I didn't have sour cream, so substituted whipped cream cheese, which was good too!

Chicken and Kale in Parmesan Cream Sauce

I made this for dinner tonight and everyone in the family LOVED it! I did go the lower fat route by using 2% milk and corn starch, and added 2 cloves of garlic, plus a little salt. It was very, very good. I couldn't help think that maybe a little white wine would go good in it too? Will definitely make this one again!

Evelyn's Rolled Sugar Cookies

I started this recipe before reading the reviews, but then noticed it got only 3.5 stars. I decided to continue, but did make some adjustments that may help others. I was surprised at the amount of milk, so I only added small splashes of milk after the second and third flour additions. The dough looked about right, but was still a bit difficult to work with. Instead of using flour to keep the dough from sticking, I used powdered sugar...same results as flour but better taste for the cookies. I did also add 1 tsp of vanilla, as some had said it was bland tasting. I also baked the cookies for about 8 minutes, as in my oven, 10 minutes made them too brown. Good cookie, with those changes

Chocolate Chip Pumpkin Bread

I have made this recipe as is, and it comes out great every time. Family and friends request this for Christmas every year, it's so good. In the interest of making it a little bit healthier, I have made it with half the sugar, and replace the oil with apple sauce. It still comes out great that way too.

Chicken and Gnocchi Soup

This was so amazingly good. Even my "soup hater" loved this soup. The only thing I did different was I made my own gnocchi, otherwise, I made it exactly like the recipe. Will definitely make it again.

Pork and Black Bean Stew

Everyone in the family liked this one. I did have to use mild italian sausage as our local store didn't have chorizo. I then served it over brown rice. Great recipe, that one could easily play around with. Some future options: diced tomatoes, cilantro, cumin. Will definitely make again.

Greek Lamb and Orzo

Very easy, and very good...so good my 5 year old even loved it. I pretty much made it as is, but used Franks Red Hot sauce in place of the cayenne. I also used whole tomatoes, instead of stewed...will probably use diced tomatoes next time. I did try it with the feta, which was very good too. Thanks for the recipe!

Everyone in the family loved these. We usually buy the box mix and add water, but had trouble finding the mix at our local store, so I decided it was time to make homemade. This was easy and tasted very good. I did end up adding an egg, and some water, to make it come together better, but otherwise wouldn't change a thing. Will definitely be making this again!

Banana Muffins II

These muffins were a real hit. I made a couple minor changes: used brown sugar instead of white, and added about 1/2 tsp cinnamon. These muffins were very moist and tasty. Will definitely use this recipe again.

Kielbasa with Pasta

This was a quick and easy dinner recipe that everyone in this house loved. I used red pepper, bow tie pasta and just one can of diced tomatoes, since that is what I had on hand. I did add some dried basil, too, which was very good. I can't wait to try it again, with fresh basil. Definitely a "keeper"!

Crumb-Topped Strawberry Rhubarb Pie

This was a great recipe. I did cut the sugar in the filling down to just under a cup, and could almost cut it to 3/4 of a cup, for my taste. I also cut down on the topping, as another reviewer said it made too much. Even after cutting it by about 1/4, I still ended up with about twice as much as I actually used, so I am saving the rest for future use on muffins or something. I also omitted the pecans as I didn't have any, and really don't like them much anyway. I will definitely be using this recipe again.

Homemade Chewy Granola Bars

I made this as close to the written recipe as I could, with what I had available. I did substitute honey for the corn syrup, rice krispies for the sunflower seeds, flax meal for the wheat germ, and used a raisin/cranberry mix of fruits. Then omitted the sesame seeds and the chocolate chips. It certainly tasted really good before being cooked! They are cooling on the rack right now. The only thing I would change is cut down on the brown sugar--it was a bit sweet for my tastes, which is also why I omitted the chocolate chips. The fruit, and the honey, are probably enough sweetness, if you are looking for a healthy snack for you or your kids. I can't wait to play with this recipe again, and try different combinations of additions.

Brown Rice Lentil Salad

This was really, really good and pretty easy to make. I followed another reviewers tip about cooking the lentils (3/4 cup), brown rice (1/2 cup) and 2 1/4 cups of water with the bouillon added, and then mixing the rest as directed in the recipe. I will definitely make this again, probably when this batch runs out! I did use cilantro, as well, because that is what I had on hand, which I think I would prefer to the parsley. Fantastic recipe, thanks for sharing it!

Vegetarian Chickpea Sandwich Filling

I really enjoyed this recipe. Easy to make and very tasty. I used a food processor to chop the chick peas, as the fork and potato masher just weren't cutting it. The only minor change I made was a couple splashes of Frank's Red Hot Sauce in place of the pepper. Will definitely be a lunch staple for me.

Baked Potato Soup

This was fantastic as is. Next time around, I'll probably add more flour to have a little thicker consistency, and maybe try some sour cream to enhance that "baked potato" flavor, but this is a really great recipe. Thanks for sharing!

Broccoli Chicken Roli

I made this exactly as the recipe stated, and only had 2 problems. I did have more filling than could fit in the dough. Luckily, I had read other reviews and bought a second can of crescent rolls, just in case. For the extra, I tried something different. I used a muffin tin, instead and put one triangle in each muffin "hole", then put a generous spoonful of filling in, and pulled the point of the triangle over top. The second problem was either the temp was too high (could be my oven, but haven't noticed problems with other things) or the time was too long. I pulled them out at 23 minutes, and they were a little more than golden brown on top, and the bottom was VERY dark. The muffin tin ones, I only cooked for about 17 minutes, and that was about perfect. Nonetheless, these were delicious and I will definitely make this again! If I could give 1/2 stars, it would have gotten 4 1/2 out of 5.
