Chicken Costa Brava

WOW. This recipe totally surprised me. So different and so delicious! I used extra pineapple and extra salsa. I doubled the spices like other users suggested. Next time I will probably use 1 1/2 times what the recipe calls for instead of double. This is now one of my favorite recipes!

Almond-Topped Fish

This is a restauarant quality dish! The more onions, the better. Great over rice. I used double the parmesan cheese. Don't make a strong flavor with your side dish because this has a very rich flavor. Steamed asparagus or green beans is perfect.

Slow Cooker Pulled Pork

Soooooo yummy! We used a pork shoulder as others suggested and then I just took the fat off the pork after I drained the root beer and before shredding the meat. We used Sweet Baby Ray's BBQ sauce which was perfect. Then I made a vinegar based cole slaw to go inside the sandwiches using a broccoli slaw mix, some extra shredded carrots and a couple tbsp. of chopped red onions. The sauce was 1/2 cup olive oil, 1/2 cup red wine vinegar, 2 tsp. of sugar and a tbsp. and a half of poppy seed dressing. The tangy flavor was perfect with the sweet bbq sauce!!

Chicken Tortilla Soup I

This was delicious! I took it to a dinner party and got a ton of compliments. Everyone asked for the recipe. I made the following changes according to other user suggestions... 4 cloves of minced garlic instead of 3... cumin instead of oregano... 2 cans of chicken broth plus one chicken boullion cube instead of condensed broth & water... a full can of corn and no hominy. I also added some black pepper, cayenne pepper & a tsp. of brown sugar. Definitely include all the toppings, they really make it spectacular!

Cranberry Chicken I

love this dish! I alway add the ingredients to taste. I also add some sliced fresh mushrooms and sliced waterchestnuts to the baking dish before baking. Yummy! everyone loves this.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

This was SO YUMMY and healthy and easy to make. I took others' advice and did not drain the tomatoes. I'm glad I didn't, the dish could have used a tad more juice. Next time I might try to add a touch of white wine or just buy crushed tomatoes instead of diced. I also left out the olives and seasoned the chicken with seasoning salt and pepper. I will definitely make this again soon! Would be a great meal to serve when guests are over for dinner.

Extreme Banana Nut Bread 'EBNB'

Spanish Flan

This turned out great even though it was my first time making flan. I ended up adding water to the sugar and stirring while it cooked, in order to make the sugar carmelize. I also added a little brown sugar. One thing I wish I knew ahead of time was that the flan still jiggles when it's done cooking. The best way to check whether it's finished is by sticking a knife in the center. I did as others suggested and cooked it in a water bath. I also blended the egg mixture in a blender, which was nice and easy.

Marinated Pork Tenderloin

This was delicious! I followed another user's suggestions and used 2 tbsp of fresh minced onion instead of the dried onio, and baked the tenderloin for 45 minutes on 400. I covered the dish with foil for the first 30 minutes and then took the foil off for the last 15 minutes. Served with asparagus and roasted potatoes (olive oil, salt, pepper, garlic powder & dried rosemary).

Sue's Taco Salad

loved this! I used multi-grain tortilla chips, jack & cheddar cheese, black beans instead of Kidney, and added avocados and fresh corn. I bought three different salad dressings to try (creamy italian, peppercorn ranch and chipotle ranch) and Chipotle Ranch by Naturally Delicious was by far the best one for this salad! Also, I think the scallions are a nice to have but not necessary. I got SO MANY compliments on this dish when I brought it to a potluck. Will definitely make again!!!

Chantal's New York Cheesecake

so so so so good! and pretty easy to make. next time I'll use a cup of sour cream instead of 3/4 cup (just for personal taste). And my crust came out a tad soft... not sure if that's because water seeped in from the water bath or because of the filling. I may bake the crust for a little while in the over prior to adding the filling next time.

Grilled Salmon I

Yummm! This is the best salmon recipe I have ever tried. I serve it over rice with asparagus or green beans on the side. It's one of my husband's favorite meals! I bake it at 425 for about 15 min.
