Peanut Butter Cup Cookies II

Delicious! I used 1 tsp. vanilla, 3/4 tsp. baking soda and no salt. Adding more vanilla offsets some of the peanut flavor. Definitely need a mini muffin baking pan for this one. With a regular sized muffin baking pan, the cookies are too big for the miniature peanut butter cups. Of course, you could always buy the regular size peanut butter cups instead! This recipe makes about 24 cookies in the mini muffin pans. I fill each muffin space to the top. They are slightly dry so next time I might use a little less flour.

Chutney Baked Brie

so yummy! I took another person's advice and sliced off the top of the rine before adding the curry, chutney & cashews. I served it with apples and ritz crackers. Everyone loved it!

Slow Cooker Pulled Pork

Soooooo yummy! We used a pork shoulder as others suggested and then I just took the fat off the pork after I drained the root beer and before shredding the meat. We used Sweet Baby Ray's BBQ sauce which was perfect. Then I made a vinegar based cole slaw to go inside the sandwiches using a broccoli slaw mix, some extra shredded carrots and a couple tbsp. of chopped red onions. The sauce was 1/2 cup olive oil, 1/2 cup red wine vinegar, 2 tsp. of sugar and a tbsp. and a half of poppy seed dressing. The tangy flavor was perfect with the sweet bbq sauce!!

Sue's Taco Salad

loved this! I used multi-grain tortilla chips, jack & cheddar cheese, black beans instead of Kidney, and added avocados and fresh corn. I bought three different salad dressings to try (creamy italian, peppercorn ranch and chipotle ranch) and Chipotle Ranch by Naturally Delicious was by far the best one for this salad! Also, I think the scallions are a nice to have but not necessary. I got SO MANY compliments on this dish when I brought it to a potluck. Will definitely make again!!!

Baked Ziti I

I really liked this! Followed the suggestion to pour sauce directly on pasta and it worked well. Does make a lot of food... more than enough for six adults. Next time I might try with ground turkey. **update** I tried it with ground turkey and liked it even better! Also, I only used 1 cup of sour cream and it was still spectacular! I also used 8oz. of both the provolone and mozzarella cheese.

Easy Pizza Sauce III

this was perfect! super easy to make and turned out delicious. I followed others' suggestions and cut the oregano in half, added 1/2 a tsp. of dried basil, 1/2 a tsp. of onion powder and 1/4 tsp. sugar. This did make a LOT of sauce. Way more than we needed for a 12 inch pizza. Next time I will use a smaller can of tomato sauce and cut the recipe in half.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

This was SO YUMMY and healthy and easy to make. I took others' advice and did not drain the tomatoes. I'm glad I didn't, the dish could have used a tad more juice. Next time I might try to add a touch of white wine or just buy crushed tomatoes instead of diced. I also left out the olives and seasoned the chicken with seasoning salt and pepper. I will definitely make this again soon! Would be a great meal to serve when guests are over for dinner.

Chicken Tortilla Soup I

This was delicious! I took it to a dinner party and got a ton of compliments. Everyone asked for the recipe. I made the following changes according to other user suggestions... 4 cloves of minced garlic instead of 3... cumin instead of oregano... 2 cans of chicken broth plus one chicken boullion cube instead of condensed broth & water... a full can of corn and no hominy. I also added some black pepper, cayenne pepper & a tsp. of brown sugar. Definitely include all the toppings, they really make it spectacular!

Delicious! This was my first time making an Indian dish and it was really easy and turned out really well! I used half the cayenne pepper and golden raisins as others suggested and i'm glad I did. I used mixed frozen vegetables, which was easier and turned out great. I also substituted the milk for coconut milk. Love it and will make it again for sure!

This is a restauarant quality dish! The more onions, the better. Great over rice. I used double the parmesan cheese. Don't make a strong flavor with your side dish because this has a very rich flavor. Steamed asparagus or green beans is perfect.

Chicken Costa Brava

WOW. This recipe totally surprised me. So different and so delicious! I used extra pineapple and extra salsa. I doubled the spices like other users suggested. Next time I will probably use 1 1/2 times what the recipe calls for instead of double. This is now one of my favorite recipes!
