Saltine Toffee Cookies

If you love toffee, you will love these! I wouldn't call them a cookie, much more like a candy. I used a large jelly roll pan and used 1 1/2 sleeves of crackers. I lined my pan with my silpat liner and they came out beautifully. Don't expect these to "break" along the shapes of the crackers. They break into various shapes, but still look very nice. I think I will use more crackers (2 sleeves) next time because I prefer the taste of the few that aren't overwhelmed by the toffee mixture. They were very easy to make and a huge hit at my BBQ! Definitely one to make again and again and again and again :-)

Chewy Granola Bars

These were good, but not what I was looking for. These are definitely a cookie, not a granola bar. I worked the dough with my hands to make sure it was well blended and used wet hands to firmly press it into the pan. My kids really loved them. I'm still searching for a true granola bar recipe like ones I would buy in the store....

Sourdough Starter I

This is a WONDERFUL, sweet sourdough base. It is not a San Fransisco sourdough. I had a starter like this given to me years ago, but it died due to neglect. I am glad to have it again. Use it with this same submitter's (Becky Richardson) recipe for sourdough bread. It makes a delicious, sweet dough that I use for french toast, cinnamon raisin bread and cinnamon rolls. Glad to have this growing in my fridge once again!

Sourdough Bread I

This was delicious bread, but not the San Fransisco type some are looking for. This makes a really great sweet bread for many different uses. I am an avid bread baker and love the way this turns out. Wonderful texture and flavor. I use it to make cinnamon rolls, french toast and cinnamon raisin bread. It is definitely worth the wait time for this bread! Make sure you use the sourdough starter submitted by this same lady (Becky Richardson)!! I also cut down the oil to 1/4 C because 1/2 is really a lot for a bread recipe!

Cha Cha's White Chicken Chili

Very delicious....especially the second day! I used two cans of green chilis and soaked two cups of dry beans instead of using canned. Next time I will reduce the amount of cayenne pepper....it had just a bit too much kick for my kids, but they loved it anyway.

Eggplant Croquettes

Baked Honey Mustard Chicken

Very delicious and full of flavor! I will try marinading the chicken the next time in the sauce so that it can permiate in to the chicken more. I also found that the time was too long and the chicken was a bit dry. I will reduce total cooking time to 30 minutes. Great recipe!

Angel Food Cake III

Very disappointed in this recipe. It was VERY eggy and I couldn't eat it. I guess I am just used to the boxed version. Only one of the five in our family would eat it.

Potato Penne Soup

This was very good, but a lot of work with many dirty dishes at the end. I would suggest adding additional barley and sprinkling fresh parmesan cheese on top when serving.

Banana Bread IV

Fabulous Cilantro Pesto

This was my first experience with pesto and was very pleased. I only wish I would have had more of an idea as to how much "one bunch" of cilantro was....I will definitely make this again. Two cloves of garlic is more than enough!!!!

Soft Christmas Cookies

This is just what I was looking for!! I hate "cakey" sugar cookies. These were crisp on the edges and soft in the center. I added a 1/2 cup of sour cream for a bit of tanginess to the dough and only used 3 1/4 cups of flour. Form your dough into a long log to speed up the chilling process and use it immediately from the fridge if you have trouble with it sticking.

Best Ever Muffins

Chicken Tortilla Soup I

This was very yummy. I suggest not adding the fresh cilantro until you serve it. It lost it's fresh flavor. I sprinkled it on with the cheese. I also found it a bit bland and increased the seasonings and added red pepper powder.

Chocolate Chip Crispies

This was ok. I cooked the mixture too long and instead of bars, I ended up with crumble. If I were to make it again, I would keep the chocolate seperate by melting it and spreading it on top of the cereal once it has been pressed in the pan.

Spicy Honey Mustard Pork Roast

Absolutely delicious. I only used 1 T of pepper since I have little kids and it "kicky". We also sliced it up and basted each piece and then put it in the oven for more flavor once it was done cooking....

Best Ever Cinnamon Buns

They were very good and easier than other recipes I had tried. I was amazed at how soft the dough was....I added more flour, but will try it with less next time around. The cake mix definitely gives them a unique taste.

Awesome Carrot Cake with Cream Cheese Frosting

Made it for EAster and it was a big hit. I too reduced the amount of oil and sugar for the cake and added coconut. I'm going to try to reduce the amount of butter in the frosting too. THe frosting was a bit soft for my desires so I may refriderate it before I frost the cake next time. It was the best carrot cake I've ever had.
