Cherry Chocolate Cake

Made this for my son's fourth birthday as a volcano cake. I subbed vanilla for the almond extract (because I had almond in the frosting and didn't want it to overpower) and used at least half dark cocoa powder for a richer chocolate taste. It was very moist and fluffy, especially for a scratch cake! I was very pleased and so was the birthday boy!

Apple and Spice Pork Roast

Did this in the crock pot for about 6 hours on low. Omitted the flour and upped the spices. Just mixed it all in with the applesauce and poured it over the roast. About half way through I added some uncooked diced buttercup squash and carrots. Although I don't normally serve a new recipe to guests, I risked it with this one and am so glad I did. Rave reviews from everyone! (Now they think I can cook!) This is definitely a keeper!

Rhubarb Muffins

My husband had been begging me to make something with our frozen rhubarb from this summer so I found this recipe. He LOVED them as did his brother, both pretty hard to please. I used oats for the topping instead of almonds and dark brown sugar. The tartness of the rhubarb with the spices almost tasted like cider to me. Perfect for cooler weather!

Whole Wheat Blueberry Pancakes

I used a premixed 1/2 white/wheat I get from a local coop then added about 1/3 cup oats and 1/2 tsp of vanilla extract. Also used 2 Tbs of brown sugar instead of 1Tbs artificial sweetner and the extra 1/2 cup milk as suggested. These were by far the best from scratch "healthy" pancakes I've ever made. I was really impressed at how fluffy they were when they rose after being flipped. Super good. Thanks for a keeper!

Apple Bread

I just made this in mini muffin form since I needed over 4 dozen treats to take to church. I added about a 1/2 tsp of nutmeg and ginger to spice them up a bit as well as a few tablespoons of milk since the batter was dry. And I didn't add the nuts. The recipe made 45 mini muffins. I baked them in two batches for 20 mins each and they're perfect! A little crunch on the outside and fluffy in the middle. I used oil this time around but can't wait to try them with applesauce next time...when I can eat them all!

Annie's Fruit Salsa and Cinnamon Chips

I used olive oil nonstick spray on the tortillas since I don't usually buy butter spray and it worked great. Didn't taste olive oil-y at all. I also served the "chips and salsa" with a mock "sour cream" made up of whipped cream cheese, vanilla yogurt, and a little brown sugar. That atop the fruit and tortillas was almost like eating bits of cheesecake! Very good!

Creamy Au Gratin Potatoes

Use plenty of salt and it's fantastic! I also dice the onions, add a couple of minced cloves of garlic, and sometimes, a few slices of cooked bacon chopped up. Only problem is, we have to eat this only on special occassions because, let's be honest, it's a load of fat and carbs, but sooooo good!

Buttery Spritz Cookies

I used 1 1/2 tsp vanilla extract due to a nut sensitivity in the family and they were great! Definately flavorful, soft, and "chewy" (two people commented on the chewiness). This was my first time using a cookie press, I'd heard nightmares, and I found the dough pretty easy to use. Thanks for a great recipe!

Mom's Best Macaroni Salad

Two things: 1) Definately make the day before and 2) don't use all the sauce. I did about 2/3 cup mayo (not salad dressing) 2/3 cup sour cream, and about 2/3 of the can of s.c. milk and NO sugar! It was plenty sweet and creamy, and not soupy. I thought the peppers and onions were a little over powering the day of but they mellowed out after sitting overnight. Overall very good! I substituted a few veggies (peas are good) and added mock crab. Pretty versatile recipe and good for cook outs or large parties. Thanks!

Green Bean Casserole I

Really good! I made this for Thanksgiving today for just the 2 1/2 of us and it's almost gone! I added 2 cloves of garlic to the onion butter mix, bacon sprinkled over the beans at my husband's request, and topped the stuffing with slivered almonds. I was hesitant about the stuffing instead of crunchy onions to be honest but it turned out excellent. My 3 year old even gobbled up his greens with no complaints. Thanks for a real keeper!

Red Cabbage and Apples

After eating at my husband's favorite German restaurant in his hometown, I HAD to find a recipe for red cabbage and this was it! I don't add the onion and I use apple cider vinegar instead of white. We eat this a lot in the winter with meatloaf and mashed potatoes. Yummy!

Chococonut Chip Cookies

Very dependable recipe. I've done white choc chips with it, used half wheat flour, and even added a half cup of oats and no matter how I change it, the cookies are always perfect! The coconut's key. Thanks!

Chicken Chili Soup

I've used this recipe so many times in the last 2 yrs and it always turns out great! I like to add cilantro and sub one can of black beans for one kidney when I make it with chicken. Otherwise I do a typical chili with ground beef. I also don't add the red or green peppers because my hubby doesn't like them in his chili. As for other comments on the lack of flavor, just add salt, pepper, and a little hot sauce if you like it hot. The amt of other spices are perfect! Thanks for the recipe!

Frozen Raspberry Cheesecakes

Perfect desert just for two! I made this for my husband and my valentine's dinner and it was excellent. I only made one change to the recipe...I used chocolate graham crackers for the crust instead of the shortbread cookies. I didn't have a 4" springform pan so I used two smaller Pyrex dishes instead. I topped each of them off with 3 raspberries and some white and dark chocolate shavings. It was as pretty as it was delicious! Thanks for the recipe!

Summer Penne Pasta

I took some advice from the last reviewer and made some modifications. I took ground mild italian sausage and made mini meat balls with them, ground them, and set them aside while I did the veggies. I added about a 1/2 cup of white wine with the veggies, lots of salt, some oregano, parsley, and basil, and used a can of italian stewed tomatoes (drained) instead of fresh. Topped it off with shreded parmesean and it was a hit! My husband and our dinner guests loved it. I'll definately make it again.
