Grandma's Lemon Meringue Pie

This was so easy to make but it was soooo good! My dad loves lemon meringue pie so I made this for Easter. I was a bit worried it wouldn't have enough lemon flavor with the small amount of juice I got from the two lemons but it was just right. I always put the bowl and whisk attachment to my Kitchenaid in the freezer until I'm ready to make my meringue which helps whip it up fast. Thanks for a quick, easy recipe!

Classic Waffles

I whipped my egg whites separately, but other than that I followed the recipe exactly. I've made this recipe a few times now and have even added chocolate chips and blueberries to the batter. The waffles come out great each time and my family gobbles them up. I've frozen leftovers and they reheat perfectly.

Pumpkin Loaf

I made this just as written except I used butter and added more cinnamon and a 1/4 tsp nutmeg and it came out great! I took it to work and everyone loved it. It was super moist and very tasty. I'm making more for family this weekend. Thanks for a great recipe!

I made this for New Years Eve and although it was good, I thought it lacked a some seasoning. Next time I'll add something to give it some more kick, but overall it was pretty good.

Rolled Dumplings

These are so easy to make and so much better than the drop type dumplings. I wound up having to make 4 batches for my chicken and dumplings because my family kept eating them all. I rolled them out pretty flat and used a pizza cutter to make small triangles then dropped them into the simmering liquid. They plumped up but didn't get overly large.

Great Easy Waffles

These were really great waffles. I received a Belgian waffle maker for Christmas and was searching for a good recipe. I omitted the lemon zest and whipped the egg whites into soft peaks but other than that I followed the recipe exactly. My teenagers loved them. I only got 4 good sized waffles and one puny one out of the batch. I'll have to make a double batch next time.

Easy OREO Truffles

I have made these at least 10 times now. I use almond bark or white chocolate instead of semi-sweet because I like the balance of flavors better. Everyone who tastes them falls in love with them, even people who don't like Oreos (can you imagine these people exist?). They're so pretty and easy to make and really are fool proof.

Peanut Butter Cup Cheesecake

I adapted this cheesecake for a friend who loves Reese's Peanut Butter Cups. Everyone who tastes it falls in love with it. I've been asked to make it over and over again now. It's super easy and tastes great!

Spicy Sausage and Rice Casserole

My entire family liked this dish. I followed a couple other reviewers and added extra tomatoes (I used diced and crushed) and let it cook on top of the stove. I also couldn't find my cayenne pepper so I used my crushed red pepper which gave it the spicy zip. I left out the chicken broth and salt because the canned tomatoes had enough sodium and liquid. Overall the flavor was really good and I'm not a big fan of pork.

Garlic Chicken

I fixed this chicken when our pastor came for dinner and we all liked it really well. I used fresh grated parmesan cheese (not the kind in the can) and added a little salt and pepper to the bread crumbs and it was really tasty. Will definitely fix this again.

Margarita Cake with Key Lime Cream Cheese Frosting

I made this as cupcakes and went by the recipe just as written. I couldn't find the frozen Bacardi mix so I used 10 oz of Jose Cuervo Margarita Mix from a bottle we had and it worked just as well. The cupcakes only took about 15 minutes to bake. I also thought the frosting was wonderful and had just enough for the cupcakes (I don't skimp on frosting). I think using real lime zest and juice and real lemon zest make the taste so great. Everyone who ate them said they were the best cupcakes they ever had. Will definitely be making these again.

Turkey and Quinoa Meatloaf

This is a surprisingly good meatloaf. I followed it exactly as written (only doubled). I think we are just used to meatloaf with the traditional tomato sauce on top. The next time I make this I'll try adding that and I'm sure it will send it over the top. The texture and taste was great. I especially liked the addition of the hot sauce. It gave it the needed flavor boost.

PHILLY Blackforest Stuffed Cupcakes

These were really easy and the result was pretty impressive. I even thought I had goofed when my muffin cups seemed too full but everything baked up nicely and nothing oozed out. I topped mine with some leftover fudge icing I had from making a cake earlier in the week and my kids loved them.

Carrot Cake III

I made this cake according to the directions the first time then made it again with a few adjustments. I would have liked to have given it 5 stars on its own merit; however, it got better reviews after the adjustments. I followed what a few others did and used 1/2 cup applesauce and 1/2 cup canola oil. I also added an extra tsp. each of vanilla and cinnamon and 1/4 tsp. nutmeg. I omitted the nuts since nobody in my family wanted them. I wound up having to use 2 packages of cream cheese in the frosting because it was too runny but after adding the extra cream cheese it came out perfect. All and all with the few minor changes it was a very moist, flavorful cake. I even made cupcakes and they were wonderful. I'll be making this again for sure.

Soft Christmas Cookies

Perfect! Only used 3 1/4 - 3 1/2 cups of flour but other than that the recipe stands as it is. I would definitely sprinkle with sugar or ice these if you want a sweeter cookie. I personally like a not-so-sweet cookie, but my family likes them with the icing. An easy powdered sugar, water, corn syrup icing is all you need.

Sweet and Sour Chicken I

This was really good. I had a problem with the batter. When I added the water it looked like a big dough ball so I had to keep adding water until I got a consistency I thought was right. I left it "goopy" and not like a pancake batter and I'm glad I did because it tasted great! I almost didn't put the food color in but the sauce without it would have been totally unappetizing. I made mine more red than orange tho. My husband is a very picky eater and he said he really liked it so it's a keeper for us!

Bread Machine Pizza Dough

I make this all the time and use it for my stuffed crust pizza. I put string cheese around the edge and wrap the crust around and it bakes up perfectly. It's not too thick or too thin...just right!
