Carrot Cake III

This, like everyone else says, truly is the best. I used one of the commenters modifiers by subbing 1/2 cup oil for 1/2 c. applesause. Also, used 1 cup brown/1 white instead of two white. SO GOOD. The second time I made it, I added food coloring to frosting (3 red, 3 yellow) and used the 1/2 c. less confectioners sugar. I wanted to make a round cake, so I used two 8 inch round pans, and cooked them for 10 min less than the original time. Then, I frosted the bottom cake all around, with a little frosting on top, then the top cake, and added some sparkly sprinkles, walnuts and mellocreme pumpkins for that festive look! The best cake ever!

Spicy Italian Deviled Eggs

Fantastic! I did make some modifications though. I used light mayo, pkgd. italian seasoning instead of dressing, and also added 2 dashes chilli powder, and lastly 3 tablespoons of jalapeno olive juice from the jar. I got so many compliments on them. Not too spicy either. The olive juice gives them that extra salt kick.

Unbelievable Spinach Calzones

Love it! The only alteration I made was using jarred Classico Pesto for extra flavoring - about 1/4 or so. Makes it real good. We also top with sphagetti sauce. Thanks, great recipe.

Lemon Coconut Cake

I gave this recipe 4 stars, because overall it was a very good tasting cake. The only negative comments were that it was very "bready." I had some troubles the first time I made it, I hadn't let the eggs sit for full 30 minutes, and therefore they didn't get to a solid peak when whipped. I thought this was why there was barely enough batter for 3 pans, and when cooked they weren't very thick layers. So, I did it again. This time the cakes came out harder but still, very thin. I would say they were 1/4 inch high each. Anyways, the cake was very good. I actually added lemon juice to the frosting, which I think made the cake taste much better. Also, I think next time I will double the amount of filling. You could hardly taste it there.

Layered Chicken and Black Bean Enchilada Casserole

This is one of my new favorites. Delicious, quick and easy. I did what one of other reviewers did and spread s/c over the tortillas, great suggestion. Instead on enchilada sauce I used Curry Simmer Sauce (was a special buy from Aldi). Made is sooo flavorful! This is a favorite for sure. Freezes well also.

Loved this but I added a bit: 3/4 cloves garlic total 1 cup sour cream I food processed the cuke I used sea salt and oregano and fresh lemon juice to taste SOOOO GOOD

Norwegian Pancakes - Pannekaken

Great, simple recipe. I cannot make a pancake cooked through or not burnt to save my life. Finally something I CAN do. These turned out excellent. My swedish grandmother used to make them also. Had no clue they were so easy to make! Will make them every weekend now! This batter made 4 large and one small crepe for us. Our pan was pretty big though. I could only eat 1.5! Thanks in da wings.

Slow Cooker Teriyaki Pork Tenderloin

So good. Loved it. Didn't pan fry the pork, so I didn't need olive oil. I doubled the teriyaki, added a whole onion and skipped the chiles. Extra sauce was wonderful. Pork was succulent!

Zucchini Bread II

Loved this recipe. I lost my go to recipe so I found this one. I added pecans and cranberry raisins. I made a double batch which gave me four loaves. Everyone who received one loved it! I also ran out of brown sugar so I used all white sugar. Not too sweet, just perfect. I had some massive zukes from my garden that were perfect for this.

Potato Leek Soup III

Used three leeks - almost all of them except the very ends (green end). Used yukon golds, 1 cup evaporated milk, 1 cup heavy whipping cream. Added a lot of salt. It was flavorful and bland enough for my kids. Think next time I'll add fresh garlic. Pretty good overall!
