Zesty Slow Cooker Chicken Barbecue
This was WONDERFUL! I don't really have a slow cooker so I cooked it in my 'slow cooker substitute' pot on top of the stove. The chicken shredded easily on it's own with ocassional stirring and the sauce cooked off. Amazingly flavorful. As we avoid corn syrup (which is in most commercial BBQ sauces and salad dressings) I used BBQ sauce from Trader Joes and homeade Italian dressing from the "Italian Dressing Mix" recipie I found on this site.

Mom's Texas Hash
I view this recipie as sort of 'chili lite' and, as such, can't help but add most of the contents of the spice cabinet to it. Yummy! First off, along with the onion I added a good helping of minced garlic and seasoned the meat a bit at that time. I reduced the amount of chili powder called for in the recipie greatly and made up for it with cumin - my favorite spice for chili and other mexican dishes. I also added sage, thyme, oregano, basil, and rosemary to round out the flavors - I know I'm a spiceaholic but when I make my "everything in the spice cabinet chili" I always get rave reviews. I also added a can of red beans because I felt, as a couple of other reviewers also did, that something else was needed. Served with brown rice and with a bit of cheddar cheese sprinkled on top, this is wonderful!

Best Ever Banana Bread
Excellent banana bread, and I have tried a number over the years! This one managed to be great even through me trying to overbake it and using half soft margarine instead of all oil (neither of which I would recommended). I did add 1 tsp. of vanilla as well as generous helpings of cinnamon, nutmeg, mace and clove (I like spicy banana bread). I also used 1/2 cup of brown sugar and filled in the rest with Splenda to reduce the sugar.
