Monterey Jack Salsa

I just added some salt, and made my own yummy italian dressing. I loved all of the other ingredients and always have roasted chili's in the freezer.

Cuban-Style Yucca

My lovily cuban neighbor shared many recipes with me when he saw my love for cooking, as with many reviews given, the cook time is a bit off, as the yucca in the markets is not as good as the fresh that AL would bring over from his garden, if fresh, than about 20 mins if not fresh than 25-30, some things he recommended: Lime juice instead of lemon, it gives a different dimention, I also was told to heat the oil than pour over the lemon or lime, garlic, and zest, if you like, along with a couple pats of butter, it gives a lovily addition to this dish. I than garnish with citantro, and finely chopped green onion... but will be trying the chives...it looks really yummy on the picture.

Scalloped Pineapple

I Love this! My Mom makes this and I have made a few changes. I prefer day old bread, like a sourdough, or country white. Not wonder bread...too gummy. I use the whole rings of pineapple and cut in 1/4's. It adds a different dimention if 1/4 cup or less...to taste, of citrus zest is used. Orange is fantastic, but I like Lime or lemon best. Do not skimp on the Butter! This is sooo yummy!

Jicama Salad with Cilantro, Lime, jalapenos

I would rate this recipe as is a 4 star rating. I make mine a bit different, I like the slice of the jicama, it is pretty, I add the jicama, lime, salt and no pepper, instead I take 2-3 jalapenos halved, seeded and thinly sliced, or fresno chilis are lovily too, and I mix this together, taste to make sure the seasonings are spot on. Now for the cilantro, I do not chop my cilantro, as this bruises the leaves and tends to add too many of the stocks, I take the moment or so to take the leaves off the stock. Right before this is to be served, toss the cilantro in, saving a bit for the top....and to make it pretty and even taster, I like to add some garlic infused olive oil. just a slight drizzle on the top and than sprinkle the remaining cilantro on top. SO refreshing and pretty!!

Chili Rellenos Casserole

I tried the original way, than I looked at the plain old tomatoe sauce no spices, no flavor...and put that aside, I love Las Palmas Red Chili sauce...not enchelada sauce..it is too sweet...to use less salt, do not salt to taste, or use less cheese, or find lower salt content cheeses,mozerella is a good choice. with these changes it makes it a 6!

Ann's Dirty Rice

I only rated this 3 stars out of kindness....where is the spice? and the salt level was too high. why no use low sodium beef broth instead? Next issue...where is the heat? this is a cajan recipe...no fire no sizzle, and lastly dirty rice is made with ground chicken livers, they give it a unique flavor. On the upside this makes a pretty good one pot ground beef recipe. Please change to low sodium granules or beef broth.

Blackberry Jalapeno Jelly

Gingerbreadgirlz, I could kiss you!!!! Well maybe a Hug since we have not been introduced. I have been looking for something like this for quite awhile... I usually was able to get something simular to this made by Dantes Inferno from the big boxed stores...I will definately give this a whirl. Thank You Sooo much again.
