Blueberry Cream Muffins

I'm not sure what all the fuss is about. They're certainly not better than a good bakery's muffins; even the supermarket bakeries in my town have this recipe beat hands down. They're good; not great. Not good enough for me to give up a trip to the bakery!

Rick's Special Buttercream Frosting

Opted for this over the Sturdy Whipped Cream Frosting because I intended to use it primarily for decorating and didn't want to waste the cream cheese. This was an excellent decorator frosting. Follow the recipe exactly for perfect frosting... easy to use, easy to handle in the pastry bags, colors easily and holds up wonderfully! Will use this recipe for cake decorating from now on.

Cinnamon Coffee Cake II

I have too many suggestions to improve this recipe, according to the tastes of my family, so it's difficult to give this a higher rating. Certainly a good basic recipe. The middle layer of sugar is sweetness overload! You couldn't get through it all... too much! Either omit it or use a different filling recipe. I decided against the butterscotch pudding - not enough people like that flavor - and opted for what I had on hand, which was chocolate and vanilla. That was ok, but I'd use all vanilla next time. Probably won't make this cake again.

Fried Apple Pies

My children loved these! I used other reviewers' suggestions: I did not mash the apples. Just be sure to chop the apples into small pieces and the result will be perfect. I added more "autumn" seasonings to the apples while cooking them. After frying, I sprinkled a mix of powdered sugar and cinnamon over the tops of these wonderful pies. Thank you for a great, easy, delicious recipe!

Bodega Bay Cioppino

Very good! A wonderful base for most seafood recipes... serve over rice or with a long pasta. I left out the wine and added fresh, red hot pepper to give it a "fra diavolo" sort of kick. Excellent recipe, Beth!

Grandpa's Classic Coney Sauce

Very tasty. Not at all spicy or hot. Not greasy, so it makes for a clean meal. In all my years of cooking, I have never mixed these amounts of catsup and mustard in a sauce, and I was happily surprised with the yummy results.

Five Ingredient Ice Cream

The Best. The best. The best!!!!! I would give this 100 stars if this site had that many stars as an option! Please try this. It rivals the best restaurant or ice cream stand custards that you can find. Believe me; I'm from Rochester NY, the home of the famous Abbotts Ice Cream Custard. This is just as good. Easy. No heavy machinery needed. Economical. Delicious.

Strufoli II

I tried to copy my Grandmother's recipe. This was close, but not quite right. I was told that I should have cooked the honey longer to give it a darker color. It was not sticky enough, so the presentation was a flop.... literally. Very messy, too much work, not worth it. For those who attempt this, here's the best tip: When you roll the dough into "ropes", simply cut the ropes into the sizes you want them to be. Once you fry them, they will plump up into ball shapes. I wasted so much time shaping the dough into balls before frying them... a step that was completely unnecessary unless you have so much time on your hands that you don't know what else to do with your day.

Sugar Cookie Icing

This was my first attempt at icing such as this. My cookies looked professional... though I need to learn about tools to better apply the icing. It was tasty, pretty, and very easy to make and use. Loved it.

Cream Cheese Won Tons

A very good recipe. I had never worked with wontons before. You certainly do need to use one lightly beaten egg plus 2 tbsps water as a "seal" for the edges. I also used a fork to seal it in a pattern similar to ravioli. This is a good base recipe... once you try it, you'll add more and new ingredients to make your wontons unique.

Ranch Dressing II

I added a teaspoon or so of worcestershire sauce for added flavor, and about 1/8 cup of milk to give this the consistency of a creamier, more liquidy dressing. I also used fresh parsley simply because I love the flavor of the fresh parsley from my garden... I never use dry anymore. This dressing is perfect with a garden salad. Yummy!

Horseradish Dipping Sauce

A very good sauce. I added about 1/4 cup of mayo to the recipe because I found the consistency to be rather gritty. I wanted a creamier sauce and the addition of the mayo was just what I needed. I received raves from my guests that ate this sauce along with roast beef... a perfect compliment! I also made this with an addition of a teaspoon or so of tabasco - a wonderful zing! Try it!

Olive Salad for Muffalettas

YUM! The original cookbook recipe I had called for an olive salad (black&green olives and celery... heavy on the vinegar) in the sandwich. This was a FAR better addition! Even though I didn't have artichokes on hand, it was wonderful; though I can't wait to try this the "right" way. Also, I used white wine vinegar instead, and it was good. A splendid salad fixing! Thanks!

Limoncello

So far, the receivers of the bottles I gave as Christmas gifts say that this was good! The limoncello I've had before was not as bright of a yellow color as mine turned out to be... unfortunately, I'm not in a state that grows lemons - perhaps fresh off-the-tree would have been best. Very fun to make!

Original Irish Cream

Re-rate: What a difference a day makes! The day I made this drink, the taste was wonderful! The flavors of the chocolate and creams were the perfect compliment to the vodka. The formula seemed just right. After one week, the vodka had overpowered the drink making it too strong (it burned my insides!) and unappealing. I revisited the blender and added more of the non-alcohol ingredients, and the smoothness and "Original Irish Creme" flavor returned. I can't imagine this could be stored for 2 months... we'll see...
