Slow Cooker Chicken Stroganoff

It's very bland, and If I made this again I would use sour cream instead of cream cheese, and add mushrooms, white wine and worcestershire -- maybe even a little extra garlic.

High Temperature Eye-of-Round Roast

Chicken Suiza Cornbread Bake

Both my husband and I were disappointed in the results of this recipe. I followed the suggestion of several other reviewers and omitted the butter/margarine and instead sauteed the onions and garlic in a couple of tablespoons of oil. I also used two eggs instead of egg beaters, and the whole can of diced green chilis, and topped the casserole with Pepper Jack cheese. The casserole browned nicely on the edges and when served, it was mushy in the center and overly sweet from the creamed corn. I think omitting the creamed corn entirely would be the first thing I'd do different in the future -- if I make this again which is doubtful. I'd also use a package of taco seasoning to spice it up a bit and give it more of a Mexican flavor.

Home-Style Scalloped Potatoes

This is a wonderfully easy and foolproof way to make scalloped potatoes. I made these again today for Easter supper and everyone had seconds. This time I added shredded white cheddar between the layers and baked for 1-1/2 hours. Perfect! This recipe is a keeper.

Beef Bourguignon II

This is absolutely delicious and the smell is making my mouth water! My few changes only made this good recipe better: fresh mushrooms, fresh pearl onions, baby fingerling carrots. I cooked the mushrooms, onions and carrots until glazed in the same skillet as the meat, added all to a slow cooker, de-glazed the skillet with wine and added it to the slow cooker, along with the thyme and bay leaf. I added a cup of water during cooking and it's beautiful! Thank you for a wonderful recipe.

Ham Glaze

This would be a four-star rating if it weren't for the garlic in the recipe. The flavor of the garlic masked the basic ham flavor, as well as the wonderful mango chutney and Dijon. It's too overpowering and should either be reduced to ONE clove, or eliminated entirely.

Mexican Shepherd's Pie

This is very much like a "tamale pie." I took the advice of several other reviewers and doubled the corn muffin mix which made enough to place a thin layer on the bottom of the baking dish and still plenty to cover the top. If I make this again I wouldn't use corn muffin mix -- it's too sweet, especially given that the corn is sweet as well. I'd use a regular cornbread mix instead and use buttermilk instead of sweet milk when mixing. Instead of spreading the corn between the meat layer and the corn muffin topping I mixed it directly into the muffin batter. It came out nicely. I used two cans of Rotel tomatoes (tomatoes with green chiles) in place of the one can of diced tomatoes, and also doubled the taco seasoning. We like things fairly spicy and this gave the casserole a nice medium heat.

Kelsey's Favorite Stuffed Green Peppers

This is a great recipe and my husband really loved it. I blanched the peppers and baked them for roughly 40 minutes and they came out nicely done. Instead of using tomato sauce in the beef mixture I used a can of tomato soup.

Eastern North Carolina BBQ Sauce

Sorry, I was hoping this would really be a hit. It was too vinegary (even though eastern NC style sauce IS vinegary). It lacked something, I wouldn't make this again.

Maine Lobster Lasagna

This was delicious, my husband and I loved it. Fortunately for me, I made this around Fathers Day when my market had a special on lobster tails so it was more affordable than normal. The one thing I did somewhat differently to the alfredo sauce was to add sherry, giving it more of a Newburg-style taste -- that was at my husband's request. The basic recipe is good to use for any seafood combination and if I made it again I might experient using scallops and shrimp as the two main seafood ingredients. All in all, I would definitely make this again. It's a wonderful recipe and worth five stars.

Smothered Mexican Lasagna

Wow, this was great -- a real hit at my house. I followed the suggestions of a couple other reviewers and added refried beans to the layers and sliced black olives on the top. Also, since we're on diets here I used lowfat cottage cheese and eggbeaters instead of ricotta and egg and the lasagna still came out tasting rich and good.

Beef Bourguignon I

I'm giving this 5 stars because my husband said it was "the best" beef bourguignon he's ever eaten. I served it with rice the first night and mashed potatoes the second and happened to have on hand the tail of a beef tenderloin so the meat was very, very tender and tasty. One note about the recipe, it was a bit confusing as to which ingredients and amounts were for the marinade, and which were for the remainder of the recipe; it made things a bit hectic in the final round of preparation. That being said I will definitely make this recipe again ...Thanks!

Mexican Style Shredded Pork

My family loved this and my eldest son asked for the leftovers to take home. We like our food spicy so I added double the amount of chipotle sauce and served more sauce on the side. I also put the cilantro into the shredded pork instead of in the rice. Very good dinner, we'll have it again.
