Apple Squares

Made this once yesterday and they didn't make it through the night. I made some more but I cut back on the sugar. I only used 1/4 cup each of the light brown and white sugars and doubled up on the chopped apple, putting in a whole cup, and it came out just as nice but not as sweet: perfect in my estimation. Moist, sweet and tart all in one little snack.

Cajun Potato Soup

Good Solid recipe. Everyone likes it and requests it even but I still feel like there's something missing. I've tried using different greenery (kale, mustard greens & collards) and I've tried different kinds/brands of sausage. If you're trying to get the taste of Olive Garden's Zuppa Toscana then this isn't quite it, but it's definitely an acceptable second.

Sweet Potato Casserole II

This only get's better the more times you make it. Directions were super easy to follow and I only deviated in not adding nuts becuase my husband is allergic. Regardless, it comes out super yummy and everyone always asks for more!

Sweet Potato Pie I

I made this for the first time for Christmas and it went over very well with my family, and they are very choosey about their sweet potato pies. I was a bit leery because I'm not a baker by any means but it came out perfect. I followed the directions this time, but I'm looking forward to experimenting with this one.

Cabbage Patch Stew

I didn't think I would like this inittially, but I needed to use up some of my cabbage. So very very glad that I did. I didn't have any ranch style beans or cumin, so i substituted it with pinto beans and about 1Tbsp of taco seasoning. Still came out delicious.

Alfredo Sauce

This was super easy and great tasting. I substituted half a cup of the plain cheese for herbed cheese and that helped kick up the flavor. It was delicious!

Lemon Lover's Pound Cake

This is the first cake I've ever made that has come out nicely. I followed the directions to a T, excluding the fact that I didn't have a bundt pan. It was moist, sweet and all around delicous.

Buttery Lemon Spinach

I try not to add too much salt so I'm constantly using lemons and limes to season my food, but I had never thought to use it on spinach. It was actually quite tastey. I don't care to cook in the microwave, so I cooked mine over the stove. I melted the butter and mixed it with fresh lemon juice and a tsp. of garlic powder, used it to coat the spinach and cooked it to my desired tenderness. Delish! Light tasting and not at all greasy.

Good Old Fashioned Pancakes

I decreased the yeild amount and ended up having to add milk to thin the mix some, and I also added some vanilla extract to give them a little more flavor and they were delicious. My husband loved them, in fact he said he preferred this recipe over the one I had been using.

Grandmother's Buttermilk Cornbread

I'm so excited about this recipe. My grandmother used to make cornbread from scratch and I loved it, but hadn't had any since she passed. This one came out perfect, my mom even loved it. It is a little on the sweet side, so if you don't like sweets, I'd suggest cutting back on the sugar. Also, the second time I made it I used 1 1/4 cup corn meal and 3/4 cup of flour to make the batter less cake-like.

Black Bean and Salsa Soup

LOVED IT!!! My husband and I gobbled up our first serving, and then we had seconds. I only made a few minor changes. I increased the yeild amount to six people. I took the suggestions of some of the other reviewers;I sauted 2 finely chopped cloves of garlic in about 1 1/2 Tbsp olive oil, and I added lime juice to the individual servings. I didn't want to take the time to cook any cornbread, but I served it with some Tostito's Hint of Lime corn chips. If you are watching your salt in-take skip the chips, but either way, Yum :0)

These weren't my grandmother's buscuits, but I gave it a 5 becuase they were still good. I can't bake, like at all. My husband does all the baking. I got brave and tried this one on my own, and they turned out pretty good.

Broccoli Shrimp Pasta Toss

My husband and I enjoyed it. I added heavy whipping cream because I didn't have half and half. Also, the shrim and broccoli were frozen. I probably should have added more cheese to the sauce to thicken it up a little better, but it was good nonetheless.

Easy Fried Spinach

This recipe goes over well with my husband, and he isn't a big vegetable eater. I've made this many times and I usually add fresh tomatoes, any of the small versions. I quarter them and add them to pan when I add the spinach. This gives it a little bit more flavor. Also, I don't ever use the extra oil. All I use is the butter, but even with that you have to be carefull because too much butter can ruin it. It'll be very greasy.
