Spaghetti Squash I

I have to give this two stars because the "noodles" were pretty crunchy. I followed all of the directions and suggestions from other users: I put the squash in water, poked a couple fork holes in the exterior and even let it cook an extra 15 minutes. The flavor was okay with the sauteed onions and feta.

Chinese Cabbage Salad I

AWESOME!!!! I normally do not like salads this much but on this one the dressing makes it, I even cut the sugar in half and it was still super sweet! It definitely needs chicken (which I added) and I think next time I will add some chilled lo mien noodles and mandarin orange slices... then it would be PERFECT! I will eat this salad often! THANKS!! :)

I always buy a couple loafs of fresh french bread and then rip it in to small pieces. It is good in a sour dough bread bowl as well. Soooooooooo good, I make this all the time!!

Whit's Chicken Enchiladas

This was pretty amazing. However it was really rich because of the cream chz. I read the other postings, and added about a 3/4 to 1 cup of mild enchilada sauce in over the enchiladas with the cream. I also added some cheddar chz on the top and a can of sliced olives (added quite a bit of flavor)... even diced tomatos would be nice on the top with the olives.

Chicken Tortilla Soup V

AWESOME and SOOOOO EASY! I used southwestern seasoned pre cooked chicken breast strips instead of cooking raw chicken. It saved me 15 min! It seems so basic so I wasn't sure if there would be a ton of flavor to this soup, but there is a TON of flavor! Also, I agree with everyone else... the better the salsa you add, the better the soup. I always add the fresh chunky mild-medium salsa that you find in the refrigerated area next to the fine deli meats & cheeses- NEVER the other kind (pace etc...). One of my fav's to make!
