About this Cook
I've been married for two years and we both work for a non-profit Christian Ministry geared towards working with College students. We love our jobs, but it give us a crazy schedule which calls for some creative cooking. I'm not organized, so I'm always looking for a great recipe with the random stuff I have on hand.
My favorite things to cook
I like cooking more than baking and I like variety so this question is hard to answer. I enjoy making Mexican food because my husband and I both like things that are spicy.
My favorite family cooking traditions
My mom makes pies each year for the Holidays - we all look forward to them.
My cooking triumphs
I like trying things that are a little beyond anything I've ever done before and challenge me. I also enjoy which I change up recipes and they come out even better. Honestly - I never usually make the same thing twice, I'm always trying new things. The Ham I made this Thanksgiving was delicious and probably the most important things I've cooked.

Gluten-Free Pumpkin Muffins
Came out wonderful! Everyone loves them. I also used my all purpose gluten free flour mix (2cups) for ease and added some maple syrup to the glaze. They tastes great!

Broiled Tilapia Parmesan
Fantastic -- husband said it was the best fish I've ever made. I used "I can't believe it's not butter" and low-fat Mayo to lighten it up a bit. Only thing I added was a little dried parsley to the butter mix. One thing to note is that it's 2 lbs of Tilapia -- I had a lot of butter mix left over because I was only making 3 fillets and didn't look close enough and make the needed changes. Seriously this is fantastic, quick, and easy!!

Chicken and Pasta in a Mango Cream Sauce
It was a good dish but not great. I didn't think the mango flavor came out very well once cooked in with all the other stuff. I would have wanted that to be stronger - that's why I gave it a 3.
